Vegetable Lime Chickpea Chili

Last week packed up our mini-van and drove to Illinois to visit my family. Josh helped my dad with a home renovation project while I spent most of my time in the kitchen. I was much more useful in the kitchen. I don’t do so well with sheetrock, sanding, and painting. I don’t think the guys minded because every time they came into the kitchen they had something yummy to sample.

One night, we had family and friends over for a soup and chili party. I made Vegetable Lime Chickpea Chili from our good friend Jenny’s new cookbook, The Picky Palate Cookbook. When I saw this chili recipe in Jenny’s book, I immediately bookmarked it. I love a chili that is packed with vegetables. Plus, this recipe has chickpeas, cilantro, and lime-all of my favorites.

This chili can be made in about 30 minutes, which makes it perfect for a weeknight meal. All of the ingredients get tossed into one large pot so there isn’t a lot of clean-up. I also love this recipe because it is vegan, gluten-free, and vegetarian-which makes it perfect for serving a crowd. And if you are a meat lover, I promise you won’t miss the meat. This chili is full of flavor and very satisfying. And the kiddos will love all of the colorful vegetables. Caleb devoured his bowl of chili.

Everyone at the party loved the Vegetable Lime Chickpea Chili. It was actually the first thing to go! We are going to make this chili all winter long. It’s already a family favorite. Thanks Jenny for the fabulous recipe!

Vegetable Lime Chickpea Chili

An easy, healthy, and flavorful chili the entire family will love!

Ingredients
  

  • 2 tablespoons extra-virgin olive oil
  • 1 1/2 cups finely chopped white onion
  • 1 1/2 cups chopped zucchini
  • 1 1/2 cups yellow squash
  • 1 cup chopped mini sweet peppers
  • 1 8- ounce package baby bella mushrooms sliced
  • 2 tablespoons minced garlic
  • 2 15- ounce cans chickpeas drained and rinsed
  • 1 28- ounce can diced tomatoes
  • 2 cups vegetable broth
  • 1/2 cup chopped fresh cilantro leaves
  • 3 tablespoons lime juice
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions
 

  • 1. Heat the olive oil in a Dutch oven or large pot over medium heat. Add the onion, zucchini, yellow squash, sweet peppers, and baby bells and cook, stirring, until tender, 5-8 minutes. Add the garlic and cook, stirring, for 1 minute. Add the chickpeas, tomatoes, broth, cilantro, lime juice, cumin, chili powder, salt, and pepper, stir to combine and cook until hot, about 5 minutes. Reduce the heat to low and simmer until ready to serve.

  1. Favorite weeknight meal is a big salad, tons of fresh seasonal veggies on top, with tofu or tempeh and homemade salad dressing. Easy but I never get sick of it – and it’s fast!

  28. Chicken tortilla soup–practically the only thing everyone in the family will eat with no complaints. My kids call it “chip soup” because they add crushed tortilla chips as a topping.

  30. My favorite weeknight meal is something that was prepared on the weekend and is waiting to be reheated on a week night. I’m usually too lazy to make a meal on a weeknight, so if I have to I go with something easy – a fried egg sandwich, frozen veggie burger, etc.

  34. My favorite weeknight meal is something quick and easy, but still delicious. Being a college student I love anything that I can throw in my crockpot and leave to cook while I go to class!

  35. One of my favorites is quinoa and chick pea salad. In the summer time, I add cucumber and tomatoes and use a curried vinaigrette. It is packed with protein and a great main dish salad. When the temperatures drop, I swap out the cucumbers and fresh tomatoes with grilled eggplant and sun dried tomatoes. I can eat it chilled as a salad with curried yogurt dressing or I serve it warm as a pilaf.

  36. My favorite weeknight meal is my quick and easy jambalaya! It’s so simple, my husband can even make it. And it takes less than 10 minutes to cook (unreal, I know). It makes enough food for not only dinner but also a lunch each for my husband and me.

  38. I can’t wait to try this recipe. Just love Chili for a weeknight meal because it’s quick and easy and usually something that can be setup in a slow cooker and it’s ready when you walk in the door. That’s the best part.

  39. One of my favorites is stir fry! It’s so easy to put chicken (or beef) in a marinade the night before, put the rice cooker on a timer setting – then when you get home from work the next day, cook up a bag of frozen stir fry veggies (fresh is best, but time isn’t always there) and the meat and it’s all set! 🙂

    We love soup this time of year. Our current favorites are a simple Lemon Chicken Orzo and another easy one, Santa Fe Soup. They are totally different, but equally yummy!

  46. We do a fair share of crockpot meals on the week days, including a lot of soups. However, our favorite foods lately are international cuisine – mainly indian or Chinese. It is amazingly quick and healthy to put together from meat (or sometimes beans) and veggies with all of those exotic spices!

  55. Even though I am a pan Asian chef by trade and training, my family loves my husband’s Spaghetti and Meatballs during the week. We always make enough for leftover’s. Thanks for the Chili recipe too. I make a similar one with Lime. lemongrass and some hot chili’s to give it a real Thai flavor.

I take whatever veggies I have on hand, dice everything fine, sautee with garlic and some spices (whatever I’m in the mood for), make a batch of Farro, then combine it all, add breadcrumbs and lots of cheese, then bake in the oven until I get a nice crispy top. It’s one of the first of many recipes that I tried of hers and became an instant family favorite. It’s super easy to make and packed full of flavor. Our two year old gobbles it up.

  77. Pasta and cheese. Easily adaptable for the non-vegetarian who likes to add pepperoni or chicken, and for the vegetarian (me) I add some vegetables like broccoli or spinach.

If I have a little bit more time, then pasta, pan seared fish (salmon, tilapia), and veggies – and if I have any left (I make a batch and freeze in ice cube trays at the end of the summer), I’ll add some pesto to the dish. Otherwise, it’s usually a red sauce on the pasta and a little s&p or a pre-made spice blend on the fish.

  82. In the winter our favorite weeknight meal is definitely a baked potato bar with lots of toppings. Sometimes the toppings include chili, broccoli cheese soup, a homemade sauce with cream cheese and ham or maybe just cheese sauce but always with sour cream or ranch dressing, grated cheese and bacon bits or chunked ham. Everyone can have their favorite meal.

  83. My favorite is salmon salad. Comes together in the time it takes to cook the salmon and we usually have all the ingredients on hand. Thanks for you blog. I’ve made several recipes and they have all been super yummy.

  85. My favorite weeknite meal has to be a BLT. Only when the tomatoes are at their peak, cut thick enough to drip down your arms, with thick smokey bacon, lots of fresh crispy lettuce, and chewy crusty sourdough bread. Old school, but oh my.

  93. Hmmm…. I love pasta so as boring as it sounds, the kids and I love spaghetti or tortellini night with some homemade breadsticks. The husband? Not so much but he eats it anyway.

  94. One of my favorite weeknight meals is a quick “kitchen sink” skillet sauté. I call it “kitchen sink skillet” because I am looking around in my kitchen and refrigerator to see what needs to be used up while it’s still fresh, and it often feels like I toss in everything but the kitchen sink!

    Really, I don’t. I am comfortable with my knowledge when it comes to what pairs well with what, and when I come up with a winner, I am supremely happy… and if it’s less than a homerun, it’s still rib-sticking, lip-smacking good. End result? My belly is delighted, no matter what.

  95. This chili looks delicious! My favorite thing to make on weeknights is soup of any kind. And there are always leftovers to take to work for lunch the next day!

  96. My favorite weeknight dinner is actually breakfast for dinner! I love doing a scramble with lots of veggies and some oatmeal! Yummy!

  97. The first meal my husband ever made me was Chicken Pesto Pasta. The story of that night has been told so many times to our children that 18 years later when he cooks it there’s a sense of love and comfort that seeps into all of us.

  103. My favorite weeknight meal is pizza. I make the dough and sauce ahead and freeze them. I simply pop in the fridge in the morning and when I get home from work, roll a pizza out and use what we have in the house as toppings. Always a winner with the family.

  124. Favorite weeknight dinner is a big helping of pasta (preferably angel hair with homemade marinara sauce- but I’ll take whatever I have) , a side salad (ranch dressing please) and crusty french bread. I’ve never met a carb I didn’t like.

  126. It depends on the time of the year. In the fall, I enjoy mashed squash, saucy and spicy lentils, and mushrooms sauteed in olive oil with a splash of acid and salt. The summer is tempeh and lettuce and peppers on rye bread with hummus. The winter leaves me craving for gulyas leves. Spring is a lovely time for vegetable sautes.

  130. My son loooooves spaghetti, so it is a weekly item on our menu. I make one big pot and we have enough for a couple of dinners plus my lunch. I add fresh zucchini and carrots, diced very small, into the meatsauce. If I don’t have fresh veggies, I toss in some frozen veggies (my fave: Trader Joe’s Organic Foursome). I add a green salad and “garlic” bread… there is no garlic involved, just toasted baguette w/ butter, but he says it’s garlic bread so I roll with it.

  133. My favorite weeknight meal is pizza – made by me. I have no shame in using Boboli pizza crusts to save time, but the toppings are all me. My favorite is red onion and yellow pepper – I swear, it is the best sauteed combination! Try it sometime!

  134. Pizza. My husband and I trade off making the dough, and the other person chops the toppings and puts it all together. It’s delicious and easy!

  137. My family pretty much eats anything I put out during the week… I like pasta for its convenience, but soups are good too. If my son had his way, he’d eat paninis! My husband would eat Mexican (the spicier the better) and my daughter would prefer a big salad or lots of veggies! One of the best weeknight dinners is Breakfast for dinner! Yum! I love your recipes and I love Jenny’s too! Would love to have this cookbook!

  141. Thai chicken stir fry: the secret is red curry paste which makes stir fry so easy and tasty and I can even throw in a bunch of vegetables! A little goes a long way.

  145. Our favorite week night meal is CHEESE/ONION/ROASTED RED PEPPER STRIPS/ ENCHILADAS with a favorite fresh or store purchased SALSA & I serve some sort of beans as a side dish. YUMMY! I’ve made them so many times that it only takes minutes & everyone loves them.

    When I ask for ideas for dinner the answer is most always “CHEESE ENCHILADAS.”
