Tomatillo Salsa, sometimes called salsa verde, is one of our favorite salsas to make during the summertime, along with pineapple, peach, and mango salsa! We love making salsa!

While most salsa verde recipes call for roasting or charring the tomatillos first, this raw recipe is much easier and preserves the tart flavor and bright green color of the tomatillos. The flavor is a little more sour, but so good with salty tortilla chips and all of your favorite Mexican dishes.

The Tomatillo

Tomatillos are the star ingredient! You can find tomatillos at most grocery stores in the produce section. They look like small green tomatoes, but have a husk around the outside.

Picking The Right Tomatillo

Look for tomatillos with a husk that covers most of the fruit. Make sure the husks aren’t torn or damaged. The husk should be relatively tight, and the fruit inside should be firm, but not rock-hard. If the tomatillos are squishy, they are overripe.

How to Peel Tomatillos

Tomatillos can be eaten raw, they are a little tart and have a sharp flavor. When roasted or grilled, their flavor mellows out and the flavor is a little sweeter.

To remove the husks, simply peel them back from the smooth green skin. Make sure you wash the green flesh to get rid of the sticky film left by the husks.

Fresh Tomatillo Salsa

If you prefer a tart salsa, you don’t have to roast the tomatillos. Place the tomatillos, onion, garlic, cilantro, lime juice, and Serrano chiles in the blender and blend! Season with salt and pepper and you have the most amazing fresh salsa!

The color will be super bright green and you will want to grab a bag of tortilla chips and start dipping ASAP!

Tomatillos cut in half for tomatillo salsa

Roasted Tomatillo Salsa

If you want to make a roasted salsa verde, you can roast the tomatillos before blending.

  • Preheat the broiler.
  • Line a large baking sheet with foil. Cut the tomatillos in half and place cut side down on a baking sheet.
  • Place the tomatillos under the hot broiler for 5 to 7 minutes or until the skins are lightly blackened.
  • Let cool to room temperature before blending.

I have an older Roasted Tomatillo Salsa Recipe that you can check out too.

Serving Suggestions

Serve the tomatillo salsa with tortilla chips, tacos, burritos, quesadillas, taquitos, enchiladas, tostadas, use it as a dressing for taco salads or burrito bowls…the options are endless!

This easy Tomatillo Salsa is going to be a staple in your home! You can blend it up in no time and it’s SO good! Enjoy!

How to Store

Keep the salsa in a jar or container, covered, in the refrigerator for up to one week. Ours usually doesn’t last that long because we like to put it on all of the things!

I’m still using an ancient blender that JUST WON’T DIE, but it’s not the best at blending things up well…still some chunks. I would be over the top excited to win one!

  198. We’re making tacos for dinner tonight… wish I had the ingredients on hand to make your tomatillo salsa tonight! Thanks for the chance to win a Vitamix – that would be awesome!

  217. Years ago, when my husband and I were just out of college and had no money, a good friend of ours bought a Vitamixer. We made so much fun of him for wasting his money, but now in a different place in our lives, with a house and a family of four, our blender gets used much more frequently and the idea of spending that much money on a blender seems a little more justified.

  218. #1 – That salsa looks and sounds amazing! Def want to try it!
#2 – Wouldn’t love to have a Vitamix! It would be great for all of the fruit-base ice pops we make!

  354. the salsa is super yummy! i’d never used tomatillos before , but my family will loved this! i only used 1 chili though…my family doesn’t have the chili-heat tolerance i do. it would have been so much easier to make with that vitamix – it’s definitely time to replace mine!

  355. The freshness and simplicity of this salsa is very appealing. Looks like many positive reviews of The Haven’s Kitchen Cooking School book for its approachable and hands-on teaching style. 375. Thanks for all you do and for the giveaway. I’ve always wanted a Vitamix but can’t justify the price! Free, however, is a price I can afford. 🙂

  376. A Vitamix in my kitchen would be awesome! I love, love, love your new kitchen, BTW! Also, to potty train my son when he was a toddler, I offered him the opportunity to go pick out any movie of his choice (age appropriate of course) if he could go all weekend without going to the bathroom in his pants. Bribery, I know. But it worked! He was potty trained in one weekend!

  404. I recently enjoyed some tomatillo salsa in a local restaurant and today I decided to give it a try, making it that is. I found your recipe online it sounded easy enough so
I went to the local market and picked up the ingredients suggested in your recipe.
Upon returning home I began the step by step process you so graciously laid out. Long story short the finished product was awesome. I may rename it Tom~atillo Salsa Tom being my name is my justification.
My friends were quite impressed and after I divulged the source of the recipe I can say for certain that you picked up 8 new fans.
    Thank you!

  405. I’ve been looking for a recipe for restaurant-style salsa verde, and this is it! My dream come true. the only thing that’d make it better is a Vitamix, the premier food machine in the world!

  406. I purchased all the ingredients to make this today. I’m curious if anyone can tell me the difference between this and salsa verde? Is there a taste difference in the raw salsa vs cooked?

    Thanks!!
