Today is National Spaghetti Day and we are celebrating with a healthy spaghetti recipe, Whole Grain Spaghetti with Sun Dried Tomatoes and Spinach. This is one of our go-to pasta dishes. It is perfect for weeknight meals because it is quick, easy, and nutritious.

We also love making this spaghetti recipe when we entertain because it stress-free and everyone loves it. We always get asked for the recipe…so here you go! You all need to add this Spaghetti with Sun Dried Tomatoes & Spinach to your dinner rotation.

We used Barilla Whole Grain Spaghetti to make this recipe. Barilla Whole Grain is all-natural and excellent source of fiber, delivering three times the fiber of regular pasta. There are 6 grams of fiber per serving. If you are looking for an easy way to eat more whole grains this year, simply switch to eating whole grain pasta. It is just as easy to make and tastes great.

I actually like whole grain pasta better than white pasta. It has a slight nutty flavor that I love. Josh and Caleb love it too! Caleb loves playing in it, but he eventually eats it and enjoys it:)

For this spaghetti dish, I tossed in sun dried tomatoes, spinach, balsamic vinegar, toasted garlic, and feta cheese. All of the ingredients are flavor power houses and come together to create an amazing meal…with very little work involved. The Barilla Whole Grain Spaghetti only takes about 7 minutes to boil and the other ingredients are easy to prepare as well. You can have a delicious and healthy meal on the table in under 30 minutes. Spaghetti with Sun Dried Tomatoes & Spinach

This quick and healthy spaghetti dish is one of our favorite weeknight meals.

Ingredients
  

  • 1 13.25 oz box Whole Grain Barilla Spaghetti
  • 1/4 cup extra-virgin olive oil
  • 1 head garlic cloves peeled and thinly sliced lengthwise
  • 1 cup chopped sun dried tomatoes packed in oil
  • 5 cups washed spinach leaves
  • 2 tablespoons balsamic vinegar
  • 1 cup crumbled feta cheese
  • Salt and black pepper to taste

Instructions
 

  • Cook spaghetti in a pot of boiling salted water until al dente, about 7 minutes. Reserve 1 cup pasta cooking water and drain pasta.
  • Heat olive oil in a small skillet over medium heat until it shimmers, then cook garlic, stirring, until golden, about 3 minutes. Transfer garlic with a slotted spoon to paper towels to drain.
  • In a large skillet, heat 1 tablespoon of the oil from the sun dried tomatoes. Add sun dried tomatoes, spinach, and balsamic vinegar. Cook over medium-high heat until spinach is wilted, about 3-4 minutes.
  • Toss spaghetti with the sun dried tomatoes and spinach. Stir in the ½ cup pasta water. Season with salt and pepper. Sprinkle spaghetti with feta cheese and toasted garlic chips. Serve warm.

    I love using whole wheat pasta in my Pad Thai, because I don’t like messing with rice noodles. Anything with a nice peanut sauce is deeelicious!

  17. It’s not necessarily a recipe but we keep our spaghetti healthy by using whole grain pasta and making our sauces from scratch. There’s something so satisfying about making an entire pot of sauce and freezing some, eating some, and giving some away!

  28. Test Kitchen’s Low Fat Spagetti Carbonara. Using fat free evaporated milk and only 1 egg + 1 egg white, couple of Tbl of mayo, some white wine. Only 2/3 C grated cheese, 3 slices of cooked bacon, a couple of ounces of Canadian bacon chopped up, garlic, salt and pepper. I add some steamed brocolli and sauteed onions too.

  32. Ironically, I’ve made this exact same dish before but instead of whole grain spaghetti, I used whole grain fusilli. It’s my favorite go-to pasta dish. It’s so easy to make and everyone always loves it! The first time I made it was for a small dinner party I had at my apt with some friends.   34. Mmmm this looks so good!! My fave healthy pasta recipe is whole wheat noodles tossed with avocado sauce. In a processor: Toss an avocado, a few squeezes of lemon juice, pepper, a clove or two of garlic, a small squeeze of sriracha (if you like spicy) and give it a whirl. Toss with your pasta. Garnish with parsley and lemon zest. Simple, bright, tasty and healthy!

  35. My favorite way to make “creamy” spaghetti dishes is to throw in goat cheese to the hot, drained pasta. Healthier than a creamy sauce like alfredo, and the flavor of goat cheese is so much better in my opinion. Then I toss in some kind of roasted or steamed vegetable, like broccoli or asparagus.

  60. My favorite spaghetti recipe is either with whole wheat spaghetti or spaghetti squash. I use ground turkey, crushed tomatoes, mushrooms, garlic, capers, crushed red peppers, red wine, chopped parsley, and chopped oregano. My husband is allergic to all mammalian meat so is a hearty sauce that he can eat without worrying about the location of the epi pen.

  61. I’m not sure I’d call it a recipe, but pasta with a vegetable heavy red sauce with additional vegetables sauteed and added is always a winner with me. Pasta with a mushroom, onion, and white wine sauce thickened with a little bit of goat cheese or neufchatel for added depth, topped with sauteed broccoli also is a favorite.

Ok maybe it’s not super healthy… but it has no butter or flour, half the cheese of other recipes I’ve used (and I use reduced-fat cheese and it still tastes great)… and I use fat free milk and whole wheat Barilla (yes Barilla! I do use your pasta and love it) and it still tastes great!

  133. I made a pasta that’s jampacked with veggies- I sauté garlic in olive oil, then add canned artichokes, fresh spinach, black olives and diced tomatoes (and I throw in a little oregano and red pepper flakes to spice it up.)

  151. I love Rachel Ray’s Tomato Basil Pasta Nests! They became a family staple when my mom starting making them 6 or so years ago. Now that I’m on my own, I love making it for myself for a taste of home. The best part is that my picky boyfriend loves the recipe too!

  157. I like to just throw something together. One I like is whole wheat or vegetable pasta with olive oil, tomatoes, some parmesan and possibly pesto or another vegetable.

  158. I made this today, only with regular spaghetti. I loved it! Only thing I’d change in the recipe is: don’t salt the water you’re boiling your pasta into! I know it may come as a shock to pasta purists but… dried tomatoes are salty, and so is feta. That’s more than enough salt!

  159. Great recipe Maria and Josh! We never tried sun-dried tomatoes with spinach before, but the addition of feta is what combines them perfectly, right?:)
    We are blessed with having lots of high quality (sheep’s milk) feta here in Greece, so this is a fantastic choice:)
