Spaghetti with Sun Dried Tomatoes & Spinach

Today is National Spaghetti Day and we are celebrating with a healthy spaghetti recipe, Whole Grain Spaghetti with Sun Dried Tomatoes and Spinach. This is one of our go-to pasta dishes. It is perfect for weeknight meals because it is quick, easy, and nutritious.
We also love making this spaghetti recipe when we entertain because it stress-free and everyone loves it. We always get asked for the recipe…so here you go! You all need to add this Spaghetti with Sun Dried Tomatoes & Spinach to your dinner rotation.
We used Barilla Whole Grain Spaghetti to make this recipe. Barilla Whole Grain is all-natural and excellent source of fiber, delivering three times the fiber of regular pasta. There are 6 grams of fiber per serving. If you are looking for an easy way to eat more whole grains this year, simply switch to eating whole grain pasta. It is just as easy to make and tastes great.
I actually like whole grain pasta better than white pasta. It has a slight nutty flavor that I love. Josh and Caleb love it too! Caleb loves playing in it, but he eventually eats it and enjoys it:)
We keep several boxes Barilla Whole Grain pasta in our pantry so we can always make a quick and healthy meal.
For this spaghetti dish, I tossed in sun dried tomatoes, spinach, balsamic vinegar, toasted garlic, and feta cheese. All of the ingredients are flavor power houses and come together to create an amazing meal…with very little work involved. The Barilla Whole Grain Spaghetti only takes about 7 minutes to boil and the other ingredients are easy to prepare as well. You can have a delicious and healthy meal on the table in under 30 minutes. Plus, the spaghetti is pretty! You can’t go wrong with a pretty pasta dish:)

Spaghetti with Sun Dried Tomatoes & Spinach
Ingredients
- 1 13.25 oz box Whole Grain Barilla Spaghetti
- 1/4 cup extra-virgin olive oil
- 1 head garlic cloves peeled and thinly sliced lengthwise
- 1 cup chopped sun dried tomatoes packed in oil
- 5 cups washed spinach leaves
- 2 tablespoons balsamic vinegar
- 1 cup crumbled feta cheese
- Salt and black pepper to taste
Instructions
- Cook spaghetti in a pot of boiling salted water until al dente, about 7 minutes. Reserve 1 cup pasta cooking water and drain pasta.
- Heat olive oil in a small skillet over medium heat until it shimmers, then cook garlic, stirring, until golden, about 3 minutes. Transfer garlic with a slotted spoon to paper towels to drain.
- In a large skillet, heat 1 tablespoon of the oil from the sun dried tomatoes. Add sun dried tomatoes, spinach, and balsamic vinegar. Cook over medium-high heat until spinach is wilted, about 3-4 minutes.
- Toss spaghetti with the sun dried tomatoes and spinach. Stir in the ½ cup pasta water. Season with salt and pepper. Sprinkle spaghetti with feta cheese and toasted garlic chips. Serve warm.

What a great dish! I’m all about healthy pasta mixes!! My favorite is whole wheat pasta with lots of fresh veggies (I’ll use whatever is on hand but spinach, peas, and yellow summer squash are my favorite add ins) with a light olive oil and lemon juice sauce. mmm. Kay eats whole wheat pasta almost daily!

It’s not necessarily a recipe but we keep our spaghetti healthy by using whole grain pasta and making our sauces from scratch. There’s something so satisfying about making an entire pot of sauce and freezing some, eating some, and giving some away!

Love your blog! I like roasting eggplant and garlic in the oven and using it as a healthy type of sauce over whole wheat pasta. I usually add tomatoes, spinach, and sometimes sautéed zucchini and yellow squash – yum!

We go the simple route. Barilla sauce with Morningstar crumbles and lots of Parmesan cheese.

Test Kitchen’s Low Fat Spagetti Carbonara. Using fat free evaporated milk and only 1 egg + 1 egg white, couple of Tbl of mayo, some white wine. Only 2/3 C grated cheese, 3 slices of cooked bacon, a couple of ounces of Canadian bacon chopped up, garlic, salt and pepper. I add some steamed brocolli and sauteed onions too.

Ironically, I’ve made this exact same dish before but instead of whole grain spaghetti, I used whole grain fusilli. It’s my favorite go-to pasta dish. It’s so easy to make and everyone always loves it! The first time I made it was for a small dinner party I had at my apt with some friends. It was quick and easy to make a big pot of pasta for everyone 🙂

Mmmm this looks so good!! My fave healthy pasta recipe is whole wheat noodles tossed with avocado sauce. In a processor: Toss an avocado, a few squeezes of lemon juice, pepper, a clove or two of garlic, a small squeeze of sriracha (if you like spicy) and give it a whirl. Toss with your pasta. Garnish with parsley and lemon zest. Simple, bright, tasty and healthy!

My favorite way to make “creamy” spaghetti dishes is to throw in goat cheese to the hot, drained pasta. Healthier than a creamy sauce like alfredo, and the flavor of goat cheese is so much better in my opinion. Then I toss in some kind of roasted or steamed vegetable, like broccoli or asparagus.

My favorite healthy pasta is a ratatouille pasta. Stir fry tomatoes, zucchini, garlic, onions with fresh herbs in some olive oil and then add to cooked pasta and top with a bit of parmesan. Yum!
Just made a similar recipe for last night’s dinner! It came from Giada on The Food Network. However, it didn’t incorporate the tomatoes, so I’m adding that note to mine.

I don’t know that I have a favorite… but I’m quite partial to a homemade red sauce with seared olives.
I’m very happy when the only thing that needs cooking is the pasta. This dish is perfect for crowds or couples and can easily be dressed up with grilled chicken.

I like it with just some garlic, olive oil, and sea salt.
My favorite spaghetti recipe is either with whole wheat spaghetti or spaghetti squash. I use ground turkey, crushed tomatoes, mushrooms, garlic, capers, crushed red peppers, red wine, chopped parsley, and chopped oregano. My husband is allergic to all mammalian meat so is a hearty sauce that he can eat without worrying about the location of the epi pen.

I’m not sure I’d call it a recipe, but pasta with a vegetable heavy red sauce with additional vegetables sauteed and added is always a winner with me. My favorite healthy spaghetti dish is the macaroni & cheese from the Budget Bytes blog! Ok maybe it’s not super healthy… but it has no butter or flour, half the cheese of other recipes I’ve used (and I use reduced-fat cheese and it still tastes great)… and I use fat free milk and whole wheat Barilla (yes Barilla! I do use your pasta and love it) and it still tastes great!
My favorite healthy pasta is chock full of veggies, so it is satifying without being a carb overload. And I like it spicy!
Our favorite is whole wheat spaghetti with homemade marinara and lots of parm/romano cheese from our friends that are cheesemakers!

This is the same kind of pasta I use, only I normally opt for the thin or angel hair spaghetti. Typically I just make it with a simple tomato sauce, with meat or meatballs, my boys need meat!

I make a yummy slimmed down butternut squash mac and “cheese” with barilla elbows and squash!
I’m a spaghetti purist–pasta with red sauce and a little parmesan.
Anything that is topped with lots of fresh veggies… summertime is my favorite for making pastas because you can load up on whatever is at the farmers market, cook them down with tomatoes and pile it all on top of perfect spaghetti noodles. I also like whole grain pasta better than white- it adds nice flavor!

With canned marinara sauce we made from garden tomatoes, mixed in with lean chicken and vegetables.

One of my favorite dishes when I was younger was my mom’s Spaghetti Pie. It was a crazy (and not super healthful) combination of noodles, sauce, and cream cheese, with a golden crust of even more cheese baked on top. Now a days, I’m more likely to opt for a dollop of kale pesto with my spaghetti, but that casserole still holds a special place in my heart!

My favorite healthy spaghetti recipe consists of whole wheat spaghetti noodles tossed with roasted heirloom cherry tomatoes from our garden (red and yellow are pretty!), extra virgin olive oil, sliced Greek olives, minced garlic, and chopped Italian parsley. Sprinkle with a grating of good Parmesan cheese, a grind of fresh pepper, and you have a beautiful pasta dish!

One of the first times my boyfriend ever cooked a real meal for me, he cooked a Bev Cooks spaghetti recipe with sausage, parmesan and spinach…I think sun dried tomatoes were in her original recipe too, so it was really similar to this!! It was so good 🙂

I actually use this pasta and I’m quite fond of it, I toss it with some baked aidell’s brand chicken sausage (sun-dried tomato flavor) and freshly grated parmagiano reggiano cheese which I learned is made with skim milk so already better for you!
I make my own marinara sauce with olive oil, garlic, red pepper flakes and herbs and serve it over my pasta. I love to add goat cheese and let it melt in–it makes the sauce creamy and tastes delicious!

I always de-fat the meat before I put it into the sauce. To make it even leaner I use ground turkey. My favorite sauces are Barilla Marinara and Tuscan Herb.

My favorite healthy pasta recipe is for a spaghetti fritatta. It calls for leftover spaghetti, eggs (mostly whites) herbs and Parmesan. It’s super easy and delicious!

I like to top my whole wheat pasta with an olive oil bread dipping mix. I cook either some chicken or shrimp in the oil. I will add mushrooms, peppers and some other veggie like peas. This also is good with just veggies.

My favorite and quick “afterwork” go to pasta is a whole wheat pasta, topped with steamed brocolli, garlic olive oil and freshly grated romano cheese. As everything comes together I place a slice of american cheese on top and watch it melt into the pasta brocolli mixture. Yummmmm

Whole grain spaghetti, artichokes, tomatoes, black olives and EVOO.
I made a pasta that’s jampacked with veggies- I sauté garlic in olive oil, then add canned artichokes, fresh spinach, black olives and diced tomatoes (and I throw in a little oregano and red pepper flakes to spice it up.)
It’s quick, easy and my kids get a bunch of vegetables in one dish.

I love to make a quick “refrigerator Velcro” primavera over whole grain pasta. Any veggies we have in the fridge get a quick sauté in olive oil, and it’s finished with a little pasta water and either white wine or fresh lemon juice. Simple, quick and fresh.

love adding fresh vegetable to my sauce. I cook fresh onions, green pepper, mushrooms and zucchini or yellow squash when tender I add my sauce until heated. keep sauce and noodles separate, add mozzarella cheese to plates before serving.

I love broccoli, squash, carrots, peppers, onions and garlic along with smoked turkey and olive oil with parm cheese and angel hair pasta.
I love my husband’s spaghetti , of fresh tomatoe sauce made from summer grown tomatoes. He layers with mozzarella ontop of noodles,and then adds the sauce, Tops it off with Parmesan. Mushrooms and green peppers are added to the sauce. Real Yummy!

I love Rachel Ray’s Tomato Basil Pasta Nests! They became a family staple when my mom starting making them 6 or so years ago. Now that I’m on my own, I love making it for myself for a taste of home. The best part is that my picky boyfriend loves the recipe too!

I love making pasta with whole wheat shells, homemade pesto, and add broccoli, sun dried tomatoes and olives. So so good and so easy!

My first comment didn’t post – LOL. I don’t have a favorite because I love pasta all the time. But I did Chicken Alfredo or good ol’ spaghetti and meatballs. I also love Barilla’s mini bow tie pasta plain.

Not sure if it’s that healthy, but I love plain ole spaghetti with marinara sauce. Simple and delicious!
we love to top whole grain spaghetti with homemade pesto made with the basil we grow on our balcony!

I like to just throw something together. One I like is whole wheat or vegetable pasta with olive oil, tomatoes, some parmesan and possibly pesto or another vegetable.
My 6 year-old helped me make this tonight and my family really enjoyed it. Thanks so much for the yummy recipe.

I made this today, only with regular spaghetti. I loved it! Only thing I’d change in the recipe is: don’t salt the water you’re boiling your pasta into! I know it may come as a shock to pasta purists but… dried tomatoes are salty, and so is feta. That’s more than enough salt!

Great recipe Maria and Josh! We never tried sun-dried tomatoes with spinach before, but the addition of feta is what combines them perfectly, right?:)
We are blessed with having lots of high quality (sheep’s milk) feta here in Greece, so this is a fantastic choice:)
