Roasted Sweet Potato, Apple, and Spinach Salad
Updated March 26, 2019
This week has been a long one! I was out of town for work and traveling wears me out. Plus, I missed Josh, my bed, and kitchen. I am happy to be home! My dad is visiting from Illinois this weekend. I am excited for some fun family time!
My brain is still pretty fried from the trip, so I don’t have a lot to say today, but try this salad-you will love it! The roasted sweet potatoes really make this salad. I like the sweetness and crunch of the apple slices too. I add a little red onion and feta cheese for extra flavor. I use fresh spinach, but a spring mix would be good too! Dress the salad with a balsamic dressing of your choice! Enjoy!
Oh, and some good news-I have a new gig! I am a recipe contributor for the website-Make and Takes. I posted my first recipe this week: Simple and Healthy Veggie Tostadas. I will be sharing a recipe once a month, so visit often. Make and Takes also has great craft and family fun ideas-so check it out!
Roasted Sweet Potato, Apple, and Spinach Salad
Ingredients
- Olive oil
- 1 large sweet potato peeled and chopped into cubes
- Fresh spinach
- 1 Granny Smith apple thinly sliced
- Red onion slices
- Feta Cheese
- Balsamic Dressing
Instructions
- 1. On a large baking sheet toss the sweet potato cubes with a little olive oil and salt and pepper. Roast the sweet potato cubes in a 400 F oven. Make sure you turn the sweet potatoes a couple of times while they are roasting. Roast until soft, about 30-40 minutes. Remove from oven and set aside. Prepare salad.
- 2. Place the fresh spinach on a plate. Add the roasted sweet potatoes, apple slices, red onion slices, and feta cheese. Drizzle with balsamic dressing. Enjoy!

Glad you’re back safely! Work travel is ALWAYS exhausting!! Congrats on the new gig- very exciting stuff. I love the looks of this salad- so colorful. I love putting fruit in salads too- makes it extra filling and apples add a nice crunch. Have fun with your dad this weekend 🙂
A light, healthy and tasty salad! Wonderful.
Cheers,
Rosa
I do something like this too! I actually use butternut squash, and roast the onions along with it too. I pile the warm veggies right on the spinach so it wilts ever so slightly. Love it!
Welcome back and congratulations on the new gig! 🙂 I love apples in salads.
Congrats on the new gig! I have everything for that salad in my pantry and can’t wait to try it out!
Looks delicious, Maria! 🙂 I love roasted sweet potatoes!
Congratulations and welcome back. The salad is amazing and very colorful.
Yum I love sweet potato in salad!
Sweet potatoes make everything better – and prettier, too. Nice to come home and have a healthy, delicious dinner. 🙂
This looks super yummy! We are growing spinach in the garden, so I’ll keep this in mind.

If anyone says sweet potatoes my ears perk up, but if anyone says ROASTED sweet potatoes, I come running! This salad sounds fabulous–so fabulous, that I think my family wouldn’t even think about it being healthy! Congrats on the Make and takes gig, so exciting!
Traveling wears me out as well. When I was interviewing for medical schools last year and had to travel all over the country to do so, I was exhausted all the time! There’s definitely no place like home.
This salad looks delicious! I love any salad with a sweet potato in it.
CONGRATULATIONS on the new gig!!! I’ll stop by after commenting here. This salad looks so healthy and colorful! Wow.

This salad sounds delicious. I definitively have to try to cook sweet potatoes more often. I would only add some pinenuts or hazelnuts for additional crunchiness!

CONGRATS on the new gig – and the salad is perfect for this ‘in between’ season; some of the first days of spring are cooler and this is perfect!
Congrats on your new gig! That is great news. Sounds like it will be a fun one. I love roasted sweet potatos, but don’t use them nearly enough. Great combination with this salad.
