Things are going well at our house. We love being parents. We are a little tired, but we can’t complain. Our little pea let us get six hours of sleep on Saturday night. He is a really good baby. We are loving every minute with him. My dad is visiting this week to help us out, which will be nice.

I made a bunch of recipes before the baby arrived and will still be posting recipes on my regular schedule, so please come visit us:) We are slowly making our way back into the kitchen. After we made the Pumpkin Cinnamon Streusel Pancakes, we still had pumpkin to use up, so I made Pumpkin Chocolate Chip Bars. They are easy to make and the perfect fall dessert.

These bars are a staple in our house. I look forward to them every fall. You can’t go wrong with pumpkin and chocolate together and these bars are dotted with chocolate chips. The pumpkin bars are soft, moist, and have a cakey texture. The bars are plenty rich due to the chocolate chips, so you don’t need to frost the bars. They are perfect for dessert or snack time. If you like pumpkin, I bet you will be making this Pumpkin Chocolate Chip Bar recipe over and over this fall.

Ingredients

Instructions

  • Preheat oven to 350 degrees. Grease a 9-by-13-inch baking pan and set aside. In a medium bowl, whisk together flour, pumpkin pie spice, baking soda, and salt; set aside.
  • With a stand or electric mixer, cream butter and sugar on medium-high speed until smooth; beat in egg and vanilla until combined. Add pumpkin puree and mix well. The mixture will look somewhat curdled. Reduce speed to low, and mix in dry ingredients until just combined. Fold in chocolate chips.
  •  Spread batter evenly in prepared pan. Bake bars for 35-40 minutes or until edges begin to pull away from sides of pan and a toothpick inserted in center comes out with just a few moist crumbs attached.
  • Cool bars completely in pan. Cut into squares and serve.

  34. I’m so glad to hear that things are going well! Six hours already? Wow, he’s a dream! So happy for you love! These pumpkin chocolate chip bars look like the perfect pick-me-up treat for a tired new parent! (or for one of a teen & tween, just sayin’)

  35. I made these, delicious! Mine turned out more like a cake than a cookie bar like I was hoping. Not sure what went “wrong” but they are still tasty : )

  36. This sounds fantastic but how on earth are you having time to cook with a new baby? Are you cooking or is someone else that you’re instructing?

    1. We made a bunch of recipes before the baby is born that we will be posting. We’ve done a little cooking, but kind of taking it easy for awhile:)

  37. Congrats on the baby boy 🙂 I’m so glad all is well. These bars look fantastic! I love cookie bars and the addition of pumpkin makes them perfect for fall.

  38. Aww!!! I’m sure your baby is amazing…I’m sure when he’s older he’ll love your cooking. ;]

  40. This looks delicious! I am bookmarking page to bake these this fall. Congratulations on your baby! Things will never be the same but soon you’ll be looking back and wondering what life was like without him. 🙂

  41. What a great baby to allow you some sleep! I bet he is being good in hopes that you’ll give him one of these pumpkin bars. 🙂 They look divine!

  42. Good to know that pumpkin puree and pie filling are different. so glad you mentioned that. Love the idea of the combination of chocolate and pumpkin…..sounds really good and these look so moist!

  43. 6 house – lucky girl. I was up every two hours with my first because she was a preemie. Enjoy that sleep girl!!

The pumpkin bars would be a huge hit here… I may just have to make them for my kiddos.

  44. I just made these for a work potluck tomorrow, and they look and smell amazing! Of course, I had to sneak a little corner to taste (no one will miss it) and it’s so good, tastes like pumpkin pie, but without all the hard work (and the crust)!

  45. Everything seems to be going well. And, this pumpkin recipe looks amazing (Btw, if you’ve had a hard time accessing my site, I’m on a new format, which is much more user friendly.) But don’t stress, you’re a busy mom and taking care of twins all day I know. Just wait till potty training. I’m pulling my hair out.

  46. These sound great!! I love pumpkin, but the recipes I’ve tried for bars before have always been too cakey for me. The texture of yours looks just perfect!

  47. I made these with whole wheat pastry flour instead of unbleached white flour. They are delicious, with a light, cake-like consistency. Very sweet though. Next time I would cut the sugar in half.

  48. Wow! These look amazing. What a great lunchbox treat for my boys next week…. How do you find time to do all of this? You guys must be very organised – good for you!

  49. hi maria! congrats! i’m new to your blog (and baking) but i absolutely adore your recipes and I tried making these bars. they came out more cake-like than bar-like, do you have any tips? i thought i followed the recipe exactly…anyway, i really want to make the new apple-peanut butter bars that you posted, but i want them like bars, not cake so i want to know what i did wrong. thanks!

    1. The bars are very moist and have a cakey texture. I hope you like the PB apple bars, they are moist but not cakey.

  50. Congratulations on your little pea! So cute!

I made these last weekend–they were incredible. My husband actually used to hands to eat one because he was so excited. Thanks for sharing another awesome recipe!

  51. I made these for my family with some pumpkin from our garden, and they were a hit! Thank you so much for the delicious recipe!!!

  52. First off, congratulations on becoming a Mommy to a very handsome and adorable little boy! Best wishes of love, laughter, joy and happiness to you and your family!

Second, I fell in love with this recipe and had to try it. Well, I’ve now made this twice and cannot seriously get enough of it – so yummy and outrageously delicious every time!

You have an awesome blog and I’m so happy I stumbled upon it.

  53. I’ve been anticipating these as a friday night treat for me and my hubby. We just had one with a glass of almond milk. Sooo delish but like you said how can you go wrong with pumpkin and chocolate! We love pumpkin so we’re rotating through all of your recipes. We’ve gotten through the pumpkin granola, nutella bread and now these-all winners! Congrats on your little pea!

  54. I’ve just discovered your blog through another blog…ANYWAYS…I can’t wait to try the ‘pumpkin choc chip bar’ recipe!

  55. These awesome! Thanks so much! I blogged about this recipe and linked back to you. I also used your photo. Let me know if it is a problem and I will take it down.

  56. I found this recipe last winter and have been saving it. I finally made them tonight for Halloween and they are delicious. I’m a big pumpkin fan and i know I’ll be making them again. Thx for the great recipe.

  57. I’ve been in a bit of a pumpkin craze this month and have tried many different recipes – this is definitely one of the best ones. The pumpkin and chocolate combination make a de-LICIOUS match!

  58. These look scrumptious…..wish I had pumpkin to make thes right now! Glad I found your blog through Make and Takes!

  59. Delicious looking recipe! I’m going to be baking these sometime this week 🙂

I just recently started a blog, and I would love if everyone could take a look. Would be greatly appreciated!

    Enjoy your day/night

  60. These are a favorite fall treat at our house! Even my husband, who claims to hate pumpkin things, LOVES these bars. We’ve made this recipe many, many times with loads of compliments from many. Thank you for bringing these into our lives! Also, wanted to mention that I like to make them with milk chocolate chips. Yum!

  61. These bars are so stinking good! Made them twice already and can’t wait to make them again. Thanks for the recipe!

  62. Made these for the first time last night – soooo good! thank you for sharing this recipe and thank Kevin and Amanda for posting it on facebook yesterday! 🙂

  63. I made these for a BBQ and a meeting and they were delicious! They were so gooey in the center that I thought I undercooked them, but I think they were supposed to be like that? I recommend covering with foil for the first half of baking so they don’t get too dark on top. Everyone said they loved them!

  64. thanks so much for the yummy recipe! I made it today and substituted half a cup of butter for half a cup of applesauce. I’ve only ever substituted once before with applesauce, so I wasn’t brave enough to use just applesauce. I don’t know if it changes the consistency, but everything was still quite tasty.

  65. These bars look great! I have been looking for a recipe for Pumpkin Butterscotch Chip bars. Could butterscotch chips be substituted for the chocolate chips in this recipe? Thanks.

  66. Just made these this afternoon. They are delicious! I was expecting more of a bar cookie, but it’s actually closer to a cake. Still really yummy though! Thanks for the recipe. I will be taking these to a pot luck in last day of class tomorrow! 🙂

  67. I know this is a really old post, but wanted to share my review. I stumbled upon this recipe searching for “fall dessert”. I made it today for a neighborhood ladies group. It was super yummy! Mine turned out much thicker (height, not texture) with a moist cake consistency. I used homemade pumpkin purée, so maybe that’s why. But even with the texture being different than expected, it was very good and received many compliments! I’ll be making again for sure.

  68. I have been making these bars every October for the last three years. The are super good. I hope you don’t mind that I shared the recipe on my Blog with a link to your blog. I’ve had so many people ask me for the recipe.!

  69. Made these tonight and they are WONDERFUL! I modified to make it vegan, so omitted the egg, used Earth Balance for the butter, cooked down a whole can of pumpkin to about a cup, reduced the baking soda by half, and totally guessed on the spices because I didn’t have any of the pumpkin spice mix. I love the light texture of these, not quite a dense blondie but definitely not too cakey either. Yum!

  70. I was expecting more of an actual bar, like a cookie texture. Instead, this was more like a snack cake. It was tasty, but not what I was hoping to make. Had to start over with a different recipe.

  71. I just made these today. I’ll start by saying I have never made pumpkin anything before and I absolutely love these and am so happy I finally have a pumpkin recipe a try!
I had to make a few changes to the recipe based on what I had at my disposal. First I had salted butter so used that, but then didn’t add the salt to the dry ingredients. Next I only had a quarter cup of white sugar so for the rest I used 1 cup of brown sugar. I also didn’t know how much 1 can of pumpkin was but was pretty sure it was not the entire can of 800 ml pumpkin I had so used 1 and 3/4 cup pumpkin. Lastly I didn’t have chocolate chips but had dark Belgian chocolate disks which I chopped up into pieces that were still bigger than chocolate chips and I only had 10 ounces, not 12. Anyway i am so pleased with the results that if I make this again (which I’m sure I will) I think I will stick with how I made it today because the squares taste absolutely perfect. The chocolate was much better quality than chocolate chips and really added to the flavour of the squares. Thanks for sharing this !

Awesome! Not too sweet. More like a cake. Would be good with cream cheese frosting. I added some cinnamon. Just the right amount of pumpkin spice seasoning.

  73. 5 stars
I made these for a very large brunch group and doubled the recipe. I also substituted half of the granulated sugar with brown sugar and used pumpkin pie filling instead of pumpkin. I omitted the pumpkin pie seasoning. These bars were absolutely delicious!

  74. 5 stars
I cannot believe how good this is. It’s so amazing and easy and the PERFECT balance of pumpkin and spice!

  75. 5 stars
I made these bars last week and added a powdered sugar glaze with some cinnamon in it and they were over the moon delicious. My family loved them, my daughter-in-law said these are the only bars I ever need to make!

  76. 5 stars
Made these over the weekend and they were very good! Even though I love pumpkin I actually don’t have pumpkin pie spice so I just used the spices for a pumpkin pie haha. I did add cornstarch to the dry ingredients out of habit so they were on the cakey side. I’d leave that out next time but my boyfriend ate 4 pieces in one sitting so they were def good!

  77. 5 stars
We make this every fall. My nine year old has made it at least six times this years to take to parties, soccer snacks, etc. Love it!

  78. 5 stars
I have made these twice in one week and everyone wants more!
The first time I sprinkled a little sea salt on top before baking…so nice!
Today, I drizzled a little caramel and then the sea salt….oh. my. goodness.  Divine.
Thanks for a recipe that will become a staple in our family.
    Happy Thanksgiving!

  79. 5 stars
It’s still a bit early for Fall recipes… however, I was at a diner the other day and they were making Pumpkin pie. I left without purchasing any as I do not like pie crust or the texture of pie. Desperate to satisfy my pre-fall pumpkin craving, I googled like crazy upon getting home. Found your delightful recipe. Thank you. You have warmed my heart and the pallets of several grateful neighbors!!!

  80. These are delicious & received rave reviews at my daughters’ volleyball BBQ potluck yesterday. I forgot what recipe they were & frosted them with cream cheese frosting. Mmmm!

Anyway, since I’m sharing this recipe, I noticed you may want to put the “2 sticks” for the butter in parenthesis just so no one goes putting in 2 CUPS of butter.

  81. 3 stars
I must have done something wrong because mine came out like cake. They are not like brownies- I was looking for something chewy. I was confused by the “1 cup 2 sticks unsalted butter”. I guessed that it meant 1 cup which is equal to two sticks. Maybe if I put in twice as much butter, they would have looked like the photo.

    1. Interesting! The above post is mine. After being in the fridge for a day, the bars kind of got denser- they “densified”!!! LOL. Now, they are what I was looking for- chewy and rich. Very nice!

  82. 5 stars
I absolutely love these!!! I use dark chocolate chips which tend to be bigger then your average chip, but the recipe works perfect. I get asked to make these every Fall bake sale. Thank you for posting this .. it’s still amazing almost a decade later!!

  83. 5 stars
Made these for Thanksgiving and they were great! I tried slicing them when they were still too warm in the center and they were definitely cakier, but once they completely cooled they turned fudgier. I gave most of them away and everyone loved them, will definitely make them again.

  84. I know this is many years after the original post, but had to comment. I had this pinned and I’ve long been a fan of Maria’s recipes. I had a little time the night before Thanksgiving and whipped up a batch. Needless to say it is Saturday and batch #2 I in the oven. How great are these bars?? Simple yet pumpkin and chocolate is divine together! Will keep them in rotation from here on out!

  85. These bars would not good all the way. I cooked beyond 40 mins and still seemed too moist inside.
They tasted great but I used a glass baking dish. Should I have used a metal pan?

    1. You can try a metal pan next time. Every oven is different so yours might take longer, but they should cook all the way through. The are moist because of the pumpkin though.

  86. 4 stars
Very good, brownie consistency. Tastes like a light pumpkin pie with chocolate chunks- great combo
Why does the recipe call for unsalted butter but then adds in almost a teaspoon of salt?

    1. You can freeze them and they will be good, but if I was serving them to guests, I would make them fresh:) But I would totally eat them from the freezer. I hope that helps!

  87. 5 stars
The only change I made was cream cheese frosting. They were amazing, I received many compliments on these . Yum thank you

    1. 4 stars
I’m surprised you added frosting. I think they were so good without, that any added sweetness would decrease the deliciousness.

  88. 5 stars
So very good! We love pumpkin and chocolate. The combination in this recipe is spot on. Easy to make, but be careful. So good it’s impossible to eat just one. Thank you for this tasty desert.

  89. 4 stars
Made these for the first time recently. They came out great, although I forgot to add the vanilla extract! My only complaint is that they were very crumbly, and the overall texture was more cakelike than anything. I gave plenty of time for them to cool before cutting, but they literally fell apart with a mess of crumbs everywhere. The taste was wonderful though & I noticed they tasted even better the next day & day after. Never dried out at all. I like that it makes plenty also. I’d rate them about a 7 on a 1-10 scale.

  90. 5 stars
These are now my go to recipe for pumpkin bars. So easy to make and a great way to use up the canned pumpkin I had.

  91. I used some kind of an unidentified winter squash/pumpkin in this recipe. I used brown sugar instead of white and mixed up my own tablespoon of spices. I added chopped walnuts to the recipe. It came out delicious, but rather crumbly. I wonder if adding another egg would make them more cohesive? The bars were light and absolutely scrumptious!

  92. 2 stars
More cake-like than brownie-like. Will refrigerate for a day as some of the other reviews say the density increases. Would not make again with the result as is today. Wéll see about tomorrow though
