Pie Plate Chocolate Chip Toffee Cookies
Updated March 26, 2019
On the 4th of July, our neighbors invited us on their family hike to Willow Lake. Every year they go on the same hike to celebrate the 4th. We were thrilled when they invited us to join them. It isn’t a long hike, but a beautiful one. They told us we didn’t need to bring anything, but I baked pie plate chocolate chip toffee cookies to share with the group.
We had perfect weather for the hike-clear blue skies, sunshine, and a nice cool breeze. The Utah mountains are abnormally green this summer. We passed through meadows of lush green plants and trees. There were also bursts of color from various wildflowers growing along the hiking trail. It was nice to soak in mother nature’s tremendous beauty.
When we passed the lake, we found a nice little spot to have a picnic lunch. We brought fruit, sandwiches, crackers and hummus, the usual picnic fare, but our friends made hot mac n’ cheese and noodles with their camping cooking equipment. I was impressed. Who said you couldn’t have a hot meal on top of a mountain? I don’t camp, so I guess I’m not aware of the possibilities:) When we finished eating lunch, I passed around the pie plate chocolate chip toffee cookies. Everyone grabbed one with a smile.
These pie plate cookies are simple to make. The cookie dough gets pressed into a pie plate, you don’t have to bother scooping out individual cookies. I cut the cookies into wedges and packed them in a tupperware for our hike. They travel well and everyone loves chocolate chip and toffee-especially in cookie form. These pie plate cookies were the perfect sweet ending to our hike.

What a great, easy recipe! You could make a great cookie cake out of these too but just adding a little frosting message on top. The hike sounds like fun. I love hiking &camping. We haven’t gone in a while.
These look like the perfect sustenance/treat after a long hike! What a delicious thing to bring with you.
These look wonderful Maria 🙂 I’ve made brownies this way too, the presentation is impressive and so simple!
There’s just something about baking cookie dough in a pie plate that makes it that much more delicious!
Now that’s a healthy serving of cookie!

easy-peasy! what a fun way to make a cookie even more special!
Great idea! I agree with others, ice cream on top would be fabulous.
I need to hike in the SLC area. I just love Utah hiking. These would be such a treat in the beautiful outdoors. This recipe looks yummy.

I want this with some ice-cream!
Your description of the hike makes me almost as jealous as the photo of the cookies 🙂
What an ultra-sweet treat! This would be perfect with some ice cream.
That is one of my favorite cookie recipes, except I press mine into a tart pan w/ a removable bottom. Never put the toffee in there either, just have done good old fashion chocolate chip.
Sounds like a wonderful hike. My husband and I used to hike in various areas around SE Idaho and N/NE Utah every weather permitting weekend. Logan Canyon is our favorite hike.
Not only do I love reading your because of the food, I also enjoy hearing about the goings on, weather, etc. in that neck of the woods. So, thank you! I miss it so!

What a great idea. Sometimes I am in the mood for cookies but not in the mood to shape them individually. And toffee… Yum.
the pie aspect is fun, but it’s the presence of those amazing toffee pieces that grabs me and won’t let go. good stuff, maria. 🙂

Pie plate cookies are always the best. You felt like you were getting away with something as a kid, since the slice seemed so much bigger than a cookie 🙂 I love your recipe. I can’t wait to try it with the monkeys.
That’s the way to eat a cookie – BIG COOKIE HUNKS.
