Peanut Butter Oatmeal Sandwich Cookies
Updated March 26, 2019
First of all, I want to thank everyone for your sweet comments on the announcement of our first cookbook, Cookie Cravings. We really appreciate your support and are glad you are excited about Cookie Cravings. Make sure you sign up for the email list to stay up to date on all of the cookbook information.
I created and baked A LOT of cookies for the cookbook. I made 40 different cookie recipes in 2 weeks. Our kitchen was overflowing with cookies. Everywhere I turned there was a cookie. Talk about temptation. Luckily, I couldn’t eat them all because Heidi had to take pictures of them:) After the photo shoots were finished, we shared the cookies with friends and neighbors. They loved being our taste testers:) You think I would have gotten sick of cookies, but it didn’t happen. I just don’t think that is possible. I did take 2 weeks off from baking cookies, but my cookie cravings didn’t go away, so I made Peanut Butter Oatmeal Sandwich Cookies. They always cure my cookie cravings!
Peanut butter cookies always hit the spot and these are a deluxe version because you get two cookies with a creamy peanut butter filling in the middle. I love sandwich cookies because they force you to eat two cookies:) The cookies are soft and chewy with a creamy peanut butter filling in the middle. Watch out, that peanut butter filling is dangerous. I don’t know what it is with me and peanut butter fillings, glazes, and frostings. I can never keep my finger out of the bowl. I love the stuff!
These cookies remind me of Nutter Butters or Girl Scout Do-si-dos, but of course they are a million times better because they are homemade…and homemade is always best! You can’t beat a fresh cookie. The double dose of peanut butter has you begging for a swig of milk, so make sure you have a glass of cold milk nearby.
Peanut butter fans, get out the peanut butter and get baking. These Peanut Butter Oatmeal Sandwich cookies do not disappoint!
Peanut Butter Oatmeal Sandwich Cookies
Ingredients
For the Cookies:
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter at room temperature
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup quick-cooking oats
For the Filling:
- 3 tablespoons unsalted butter at room temperature
- 1/2 cup creamy peanut butter
- 1 cup powdered sugar sifted
- 3 tablespoons heavy cream
Instructions
- Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper or a Silpat and set aside.
- In a small bowl, whisk together the flour, baking soda, baking powder, and salt. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, peanut butter and both sugars on medium speed until light and fluffy, about 3 minutes. Add the egg and vanilla extract. Mix until combined. With the mixer on low speed, slowly add the dry ingredients, mixing just until combined. Finally, add the oats and mix until just combined.
- Take about 1 tablespoon of dough and roll into a cookie ball. Place on prepared baking sheet, leaving about 2 inches between the cookies. Bake for 10-12 minutes, or until the cookies are slightly golden and the edges are set. Let the cookies cool on the baking sheet for 5 minutes then transfer them to a wire rack to cool completely.
- While the cookies are cooling, make the filling. Combine the butter, peanut butter and powdered sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat until smooth. Add the heavy cream and beat until light and fluffy. Using a knife, spread peanut butter filling onto the flat side of a cookie. Find a cookie the same size and sandwich the cookies together, pressing the filling to the edges.

These cookies combine two of my favorite cookie ingredients – peanut butter and oatmeal. That, combined with the fact that you have never made a bad cookie, makes me so excited to try this recipe.

It’s 7:30, I’m on a bus, and I WANT THESE COOKIES! YUM!
These look incredibly dangerous! I was just thinking about girl scout cookies. I am sure these have a ‘cleaner’ ingredient list!
Hi,
These cookies look fantastic! I love peanut butter. I work for Kamut International. I bet this cookie recipe would be equally as delicious if made with Kamut wheat flour too. Yum! Thanks for sharing.

Peanut butter filling is always dangerous 🙂 I can’t even fathom how much butter and sugar you went through for 40 batches of cookies!!

You are hitting my sweet spot here this morning, Maria. I just laid out ingredients for the first project of the day, and it includes both oatmeal and PB. And you know we’ll be making yours some day, too, right?! They look delicious. Still thrilled for you and your cookbook – and thanks for including my Chocolate PB Sandwich Cookies today!
These look like they’d be deadly……..I wouldn’t be able to walk away from these. I have a soft spot for all things that involve peanut butter. I guess Josh didn’t get to taste these ones. 🙁

Peanut butter is in the air! I just made peanut butter cookies too and have those posted. I found white chocolate peanut butter at Sunflower the other day and made a peanut butter white chocolate chip cookie. You’ll have to try the white chocolate peanut butter–its to die for! These look great too! My kids love Nutter Butters but I won’t buy them. (Homemade is the best way) I’ll have to make these and sneak them into their lunches. Thank you and congrats on your book! You are amazing!!! –Traci
I can’t even stand how delicious these look. Amazing!
Peanut butter and oatmeal are my all time fave! Love how they are sandwiched together! Mmmmmmm!!

These look amazing! I could eat a bowl of that filling. Yum!
Peanut butter may be my all time favorite food! That being said, not only do these look like a yummy snack, but also a filling, nutritious breakfast. Can’t wait to make them!!
Oh my love the filling!
Peanut butter is always good. So peanut butter on peanut butter – double perfect. Hmm, maybe they need to be Double Stuft, like Oreos?! 🙂

These sound incredible – my first thought was that they resembled a girl scout cookie too. Like you, I have no limits when it comes to cookies!
I don’t think I’d ever get tired of cookies either, they really hit the spot!
In Canada we can’t buy Nutter Butters anymore, so these are perfect! In fact, I made them today and they are sooooo yummy!! Wishing I’d made a double batch…does one cookie sandwich count as one cookie? I sure hope so…
Yum. Yum. Yum. These look utterly delicious.
Oooh, those look really good, Maria. They’re exactly what I want right now, at 7:02 in the morning.
how I wish I was one of your test testers for the cookbook. Congratulations Maria!

YAY For your book! And these cookies look amazing 🙂
PB cookies rock and that is all there is to it 🙂
These are fantastic!!! Thanks so much for posting. I saw these yesterday and had to make them for National Peanut Butter Lovers Day. I took them to my small group at church and they were gone within minutes and everyone gave them rave reviews.
What an amazing idea – not sure why I never thought of this. Great job Maria and congrats again.
Just wanted to say thank you! I baked these cookies on a whim last night. They were so good, I was afraid I’d eat them all, so my hubby took them to work this morning. I just got a request for the recipe! I sent them a link to your blog post.
What a great way to add in an extra dose of peanut butter. The creamy filling sounds delectable. What’s not to love!
I love the mix of PB and Oats. Awesome recipe 🙂
These are do-si-dos.
Made these tonight and they were fantastic! They came together really quick too which is always a bonus!
Found these on pinterest and just had to try them with a chocolate ganache filling. They might be my new guilty pleasure 🙂
only 5 minutes prep time? how can that be?
Sorry typo! I changed it to 15-thanks for catching that!
Wow, I’ve yet to find an oatmeal cookie recipe that includes peanut butter. That’s been my problem. My boyfriend loves oatmeal cookies, but also peanut butter cookies. I’ll just have to combine them and make this recipe! Can’t wait to try it out. Thanks for the awesome post!
These look delicious !Thank you!
Two of my favorite things, put together! I’m excited to try this.
I’m having some cookie cravings now!!!
Amazing! Just made them and they truly are even better than a do-si-do.
YUM… thanks!!
Those sound delicious!! Do you think I could substitute Biscoff Spread for the peanut butter?
I haven’t tried Biscoff in this recipe, but I am sure it would be delicious!
lovelovelove these! made them the other day and they are soooooo good! i am new to the blogging world and have made this one of my first posts 🙂
Those cookies look divine. I can’t wait to try them.
Hi Maria and Josh!
I’ve used the peanut butter oatmeal deliciousness of your sandwich cookies as a base for my snickers cookies – for those in need of a giggle! There’s a link to your recipe here: http://cake-doctor.com/2012/05/snickers-cookies-for-those-in-need-of-a-giggle/.
Thanks for the inspiration! xo
I made these cookies today and they are amazing. I think they might be the best cookies I’ve ever made. Obviously I can’t wait to try the rest of the recipes when your cookbook comes out!
amazingly delicious!!! I’ve made these twice now and they are a show stopper! Beautiful, delicious, PERFECTION! Thanks for sharing this recipe!
I just tried making these and they turned out awful!!! I dont know what I did wrong but the dough was soo dry I couldnt roll it into balls so I added a second egg…..after they were done baking I was left with dough-ball cookies. I couldnt turn them into “sandwiches” with the cream in the middle so I instead spread the cream on top. Im disappointing, the cookies made me sad and peanut butter shouldnt make anyone sad, its the happiest butter out there :0(
Could you make these gluten free by replacing the flour with rice flour!?
I made these for my husband and kids after I fell in love with your photos! OhMyCookies! They were SO good!! Definitely a keeper recipe! 🙂
Holy cow!!! These are delectable!! The cookie is chewey in middle and crisp on outside.., and the filling – don’t get me started!! It’s velvety and perfect!! Made a double batch so I can take some to work and leave some at home for family. Have a feeling I’ll making some more very soon, as they don’t cost $4/box!! 🙂
SO glad you liked the cookies!
I made the cookie part of these tonight (not the filling). I subbed the egg for a flax egg, which seemed to be a bad choice. The dough stuck together well, but once the cookies came out of the oven they were crumbly. The sugar was still kind of grainy and not incorporated well. They were tasty, though! I’ve been eating them with a spoon 🙂 I might melt some chocolate and drizzle it over the crumbs!
These cookies are delicious, but kinda thick can you flatten them before you cook then…you said to use a tablespoon but I only got 22 cookies but they are fantastic!
I was thinking about rolling them out and use a cookie cutter for thinner cookies. Probably need spatula to pick them up and place them on the baking sheet. Could take more time.
This is just my personal opinion, of course. It’s all trial and error for what works best for you.
The peanut butter oatmeal sandwich cookie recipe looks great, but before I try to make them I have a question.
Will it work with half the sugar, and using whole milk instead of the heavy cream in the cookie?
These are insanely delicious! Made them exactly as written. One of our favorite Christmas cookies. Everyone raved about them. Next time I will double the recipe.
