Peaches ‘n Cream Muffins

Today is the first day of school for the kids in our neighborhood. I am a little jealous. I kind of miss the back to school butterflies. I wish I could go back to school sometimes, well, at least for a week:) I miss picking out new school clothes, buying school supplies, decorating my locker, and catching up with friends. In honor of the first day of school, I made peaches n’ cream muffins. These muffins are a great breakfast treat for such an important day.
I grew up in a small town in Illinois, actually it isn’t even a town, it is a village. On main street, there is one small cafe, a dentist office, post office, library, and that’s about it. There is not even a stop light. My graduating class had about 60 students. Everyone knows everyone.
We lived in the country, about seven miles from “town.” We looked forward to going back to school so we could see our friends. We felt isolated during the summer since we lived so far from town. Sure, we invited friends over and went to our friends houses’ to play, but not as often as we would have liked. I got pretty tired of hanging out with my brother and sister all summer long. So back to school time was always exciting.
Because we lived in the country, we had to ride the bus to school. We stood by our mailbox every morning, waiting for the big yellow bus to come around the corner. My brother, sister, and I would usually play games, talk, kick rocks, or pet the neighbor’s horses to kill the time. Once we got on the bus, we had about a thirty minute ride until we got to school. The bus had to pick up all of the other country kids before heading into town.
At the beginning of the school year, we had assigned seats, which I hated. But by the end of the year, we could sit wherever we wanted. On the way home from school, we always tried to sit in the very back. The country roads were not paved and the back of the bus was extra bumpy. It felt like we were riding a roller coaster all the way home. We loved hitting the big pot holes. It felt like our heads were going to touch the ceiling of the bus because we were bouncing so high.
I will never forget riding the bus to school. We had some good times on the magic school bus! When my brother turned sixteen, we rode to school with him, but sometimes I would take the bus home, for old times sake.
Start the school year off right by making a batch of peaches n’ cream muffins. The muffins are light and have a special cinnamon cream cheese filling. The fresh peaches add bursts of juicy, fruity deliciousness. The cinnamon sugar dusts the muffin tops with the perfect amount of sweetness. The peach muffins smell incredible while baking too. If your kids are having a hard time waking up in the morning, just pop these muffins in the oven. They will hurry down to the breakfast table in no time and I guarantee they will leave with smiles on their faces:)

Peaches 'N Cream Muffins
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/2 cup sugar
- 1/4 cup canola oil
- 1 large egg
- 1/3 cup milk
- 1 teaspoon vanilla extract
- 1 cup fresh peaches peeled and chopped
- Cream cheese filling:
- 6 tablespoons cream cheese at room temperature
- 1 tablespoon sugar
- 1/4 teaspoon cinnamon
- Cinnamon and sugar-for sprinkling on muffins before baking
Instructions
- 1. Preheat oven to 400 degrees. Line a muffin tin with paper liners or grease well. Set aside.
- 2. In a medium bowl, whisk together the flour, salt, baking powder, and cinnamon. Whisk in the sugar.
- 3. In a separate medium bowl or in a large glass measuring cup, mix canola oil, egg, milk, and vanilla together. Use a fork or whisk and combine well.
- 5. Incorporate the wet ingredients into flour mixture. Add slowly and gently stir, you don't want to over mix. The batter will be thick. Carefully fold in the peaches.
- 6. In a small bowl, mix together the cream cheese, sugar, and cinnamon. Mix until creamy and smooth. Fill each muffin cup half way with batter. Next, add a small spoonful of cream cheese filling to each muffin cup. Cover the cream cheese filling with the remaining batter. Sprinkle each muffin with cinnamon and sugar.
- 7. Bake muffins for 17-20 minutes, or until muffins are golden brown and a toothpick comes out clean. Remove the muffins from the pan and let cool on a cooling rack.

These look so good – i love how you can see the big chunks of peach inside! My husband prefers fruit things like cobblers and pies, while I prefer cakes and cookies – maybe this will be a nice compromise! hehe

These are just perfect. Mom’s out there will be loving them. They’re also a great way to use up peaches, which get soft way too fast!! I loved learning a bit about your childhood too.

These are my kinda muffins! YUM! I loved your story. Since I was a teacher for so long, I really have always hated the first day of school. Just reminds me of the chaos and stress and worry that I experienced every Aug/Sept! Glad my son is headed back on Wed though- Mommy needs a break!

Oh my goodness, your childhood sounds like mine!!! I graduated in a class of 42, and my school was surrounded by wheat fields. My friend and I loved it when we got the seat in the back of the bus. We either rode on grated dirt roads or roads full of potholes, and we loved it!. At one point, we flew so high in the air that we managed to switch places before coming down.

The beginning of school is a great day of the year, for both the kids and the mothers. At least that was my experience! Summer is great, but some how you’re ready to get back into a regular schedule after 3 months of playing. Your peach muffins do look delicious!

This is the first year in ages that we’ve had stunning, sweet, juicy peaches in Nantes and I buy a sack of them every day. I’m looking for great recipes before the season is out and this is wonderful! Delicious! And I was just thinking about the excitement of the first day of school, leafing through my new schoolbooks… I actually miss it!

I keptseeing these on Facebook and never coming over here to check out the recipes. So silly of me. They look wonderful, especially with peaches being in season right now. If I made these, I would have them all to myself because I have decided I will never let my husband eat another peach dessert and then reject it because he conveniently forgets he doesn’t like peaches whenever you put sugar in front of him!

I just made these muffins this evening. They are delicious! My husband ate one immediately out of the oven. My daughter and her friends had them warm for a snack. Everyone enjoyed them. I doubled the recipe and made 12. Next time I will do four times the recipe!! Thank you!

For the love of all that ISN’T holy! I’m fatter just for having read this post. Those look divine. I have the ingredients. Should I whip up a batch of ‘back to school muffins’ at 10 pm? Tempting (said as I pop another Pink Lemonade Macaron in my mouth that I made LAST night at 10 pm).
Oh yes, I remember the back of the bus. I also remember putting slugs out in the middle of the road and waiting for cars to run over them. You had horses, I had slugs. 🙂 My little Graham starts kindergarten this year and it is bringing up so many memories! He definitely needs some of these muffins.
My Kindergartener starts her first day next week. Been thinking of what to make for her special breakfast – these should be included! 🙂 They look awesome!

Yes, you can leave the cream cheese filling out. Add more peaches if you wish:)

Just made these for our saturday breakfast with eggs. They were delicious. I subbed a few ingredients. Used nectarines, cardamom (only in batter, kept cinnamon in cream cheese filling) and brown sugar. Wonderful recipe!

I just made these and they are wonderful! I love the combination of the cinnamon-flavored muffin, sweet peaches, and cream cheese filling.
I made these tonight! I was initially slightly dismayed that I had bought white flesh peaches rather than yellow flesh ones but they still tasted delightful! I had to amend the recipe a bit to add a bit more milk so the batter was too flourly and dry. Also I added a couple drops of lemon juice to the cream cheese to give it a tang. Thanks for sharing this recipe!

yum. These baked up quick. I managed to fill 12 standard sized muffin tins (I had 1/2 cup extra diced peaches so i just threw them in). Ive only triewd them when they were warm and they were good but id leave out the lemon zest. It felt like it didnt belong.

I live in the exact type of town that you grew up in (only it’s in Oregon) and I LOVE raising my children here! We go about a mile down the road each year and pick several bushels of peaches, most of which I can. Which leads me to my question. I’m trying to finish off last year’s canned peaches and wondering if I could use them for this recipe?
This recipe helped me to FINALLY make the best muffin I have ever made or tasted. I just kept making flat-domed, or too cake, or too sweet or too heavy muffins. All of them tasted fine but I was never satisfied with how they looked, too. Thank you for sharing your recipe! I really enjoyed it the fact it wasn’t the same old hum drum blueberry or banana recipe. I did add a drop or two of almond extract which I think added an extra yum factor.
