I am always looking for new ways to mix up my salad routine so I don’t get bored. I love this Orzo Salad with Chickpeas, Cucumbers, Lemon, Dill, and Feta. This salad is light, simple, and healthy. Enjoy it for lunch, take it on a picnic, or bring it to your next potluck. It is always a favorite. Your friends and family will love it!
I love using orzo in salads. My Easy Orzo Salad is a staple at our house. You can find orzo in the the pasta aisle. I used whole wheat orzo pasta in this recipe and I love it because it has a slight nutty flavor, but it isn’t heavy. It is nice and light and so good in salads!
I love this salad for many reasons-it is fresh, easy to make, keeps well in the fridge, and travels well. I love keeping a bowl in the fridge so I can pull it out for a light lunch or simple dinner. I also love making it for summer parties and picnics. It travels well and everyone loves it. It goes great with any meal! And sometimes it is our meal. It can be served as a side dish or main dish. Give me this orzo pasta salad and a slice of cold watermelon and I am in heaven!

Orzo Salad with Chickpeas, Cucumbers, Lemon, Dill, & Feta
Ingredients
For the Salad:
- 1 cup uncooked orzo
- 15 ounces chickpeas, drained and rinsed
- 1 cup chopped cucumber
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh dill
- 1/4 cup diced red onion
For the Dressing:
- 3 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 1 tablespoon finely chopped fresh dill
- Salt and freshly ground black pepper, to taste
Instructions
- Cook orzo pasta according to package directions. Drain the orzo and rinse with cold water to stop the cooking and to wash away some of the starches. Allow the pasta to cool.
- In a large bowl, combine orzo, chickpeas, cucumbers, feta, dill, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, garlic, dill, salt, and pepper. Drizzle over salad and stir until ingredients are well coated. Serve immediately or chilled.

I made this last night for my husband and I [and threw in some honey zested garlic chicken] for dinner and it was amazing. This is the perfect meal for something light, fresh, and cool. A perfect summer dish or even a little detox dish [which is what it was for us after an 8-stop food tour this weekend!]

This is one of my favorite salads! For a change, I sometimes leave out the onion and garlic and use cilantro in place of the dill.

Such a great spring dish! The dill makes it taste so fresh. The grape tomatoes I’ve been getting at my local produce store have been divine recently so I quartered a handful of them and added them to the salad. What a great addition! I also didn’t have a can of chickpeas on hand so I soaked 1 cup of raw ones overnight and put them in a slow cooker the next morning with 3 cups of water, a dash of salt, and a pinch of baking soda on high for 3 hours. They were perfect! Cooked through, but with enough bite left to stand up in the salad. Happy spring everyone!
Made this for a potluck and it was good! Light and refreshing…I did add a little more oil and lemon. I ended up finishing the leftovers for dinner 🙂 Will make again!
my bf hates cucumbers (I know!) – what do you think I could substitute? blanched asparagus cut up? raw zucchini?

In a word – FANTASTIC!
I didn’t have the orzo so I used mini Farfalle (bow ties) and it turned out great. Loved the lemon, dill and feta combination. We added cold sliced pork to make it a main dish salad, but it can easily stand on its own.

This was amazing! You really have to follow the ingredients exactly because they’re perfect. We have English cucumbers and heirloom tomatoes in season right now which really added to the flavor as well. Nicely done!

Our family loves this recipe. We always have it for our reunions and get togethers. I made it just a bit ago to give my daughter to take to the beach.
Tired to give it 4 stars, but they aren’t sticking. I am GF and Cow DF due to allergies. This recipe adapted and doubled beautifully for a pot luck wedding. I even added one red bell pepper chopped. I left the GF Orzo slightly undercooked and it held up great! I made it yesterday for today and I was thrilled with the results. THank you!! I swapped the regular Feta for true Sheeps Milk feta too.

Delicious salad! I had to use dried dill- so less than half as much, but it still came out great!
Great recipe, simple and delicious, you can even skip the orzo to limit carbs and still tastes great. I added vinegar instead of lemon juice.

I made this over a year ago for my grandson’s 2nd birthday party. I always make enough food for double or triple the crowd. Added some halved cherry tomatoes and shared it with fam and friends. Everyone LOVED it! I am so glad I found this recipe again as I was asked to bring to a small event tomorrow.

By far, the best salad ever. I’ve been making this salad for years since finding it and it’s always a hit. In fact, I’ve used gluten free orzo and vegan feta and just as good !

The pasta salad tasted really good. Very easy and simple to follow. My only caveat is that the dressing is a bit too acidic for my liking. I added about a teaspoon of honey to it to suit my preferences. All in all I’m very content with the volume of food I got and having a lot leftover for the rest of the week!
