Oatmeal Cookies with Cinnamon Roasted Almonds, Cocoa Nibs, and Dark Chocolate

On Friday I posted my top 12 Christmas cookie recipes, but I have another one to add. I hope you are not “cookied out,” because these are my new favorite cookies. Ok, I know I have a lot of favorites, but these are at the very top of my list:)
Last week I made cinnamon roasted almonds. I highly recommend you try them. They are great to snack on, but the best way to enjoy them is in these cookies. I created an oatmeal cookie with cinnamon roasted almonds, cocoa nibs, and dark chocolate. They are loaded with goodness! In case you don’t know, cocoa nibs are roasted cocoa beans separated from their husks and broken into small bits. I love adding them to cookies, brownies, and even ice cream.
The chopped up cinnamon almonds make these cookies divine. They add a nice crunch and fabulous flavor. The cocoa nibs and dark chocolate are an added bonus. I kept telling Josh that I wish he wasn’t allergic to nuts for just one minute so he could taste these cookies. I just wanted him to experience the best cookie ever. I shared the cookies with our friends and my co-workers, and they loved them. These get an A++ in my book!
Oatmeal Cookies with Cinnamon Roasted Almonds, Cocoa Nibs, and Dark Chocolate
Ingredients
- 1 1/4 cup flour
- 1/4 tsp. Salt
- 1/2 tsp. Baking powder
- 1/2 tsp. Baking soda
- 1/2 tsp. cinnamon
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup softened unsalted butter
- 1 egg
- 1 tsp. vanilla
- 1 cup old fashioned oats
- 3/4 cup dark chocolate chips
- 1/2 cup cocoa nibs
- 3/4 cup cinnamon roasted almonds chopped
Instructions
- Preheat the oven to 375 degrees. In a medium bowl, whisk together the flour, salt, baking powder, baking soda, and cinnamon-set aside. Combine butter and sugars in the bowl of a standard mixer. Beat until smooth, about 2 minutes. Add in the egg and vanilla extract. Beat until combined.
- Slowly add in the dry ingredients, with the mixer on low. Stir in the oats, chocolate chips, cocoa nibs, and almonds.
- Scoop dough into balls and place on a cookie sheet lined with a Silpat or parchment paper. Bake for 10-12 minutes, until slightly browned. Allow to cool for a minute on the cookie sheet. Move to a cooling rack and enjoy.

While I was in SF and went to SB (Scharffen Berger), I bought some cacao nibs. These look like perfect cookies for them! And now I’m going to have to make your almonds. These look de-lish!

This is a great combination of ingredients, Maria! I love baking with cocoa nibs, and oatmeal makes the most wonderful chewy cookies, so I’m just imagining how fantastic these must taste.
That sounds like a whole lot of awesome all in one cookie – just amazing! Although my fiance might eat up all the cinnamon almonds before they manage to be used for cookies…

Where can you buy Cocoa Nibs. Also what are dark chocolate chips, unsweetened, semisweet, bittersweet etc.
Jackie-I bought my cocoa nibs at a local market-Liberty Heights in Sugarhouse, Utah. I bet Whole Foods, Trader Joes, etc. have them. Or order them online. Don’t use unsweetened chocolate. Bittersweet or semisweet are fine:)
These cookies look delicious. I don’t have one of the above stores listed anywhere close…just King Soopers, Albertsons and Safeways. I don’t think they have the cocoa nibs there. KS does have a tastey cinnamon almond that would be good to use if a person didn’t want to make them. The cookies all sound delicous. To bad they all have calories. 🙁
Two peas, My daughter picked up some Raw Chocolate at Whole Foods. It tastes pretty bitter and I’m wondering if this was the right stuff for these cookies. When she went in she ask for cocoa nibs and they went right to these. I’m sure the chocolate will sweeten up some in the cookies. I often use some of the dark chocolate in cookies anyway…they say it is better for you!! I want to get to these cookies tomorrow.

These were delicious! I’ve been trying to find some good recipes for cocoa nibs and this one is fantastic. Wasn’t sure if I’d like the cinnamon and almonds. Seemed like alot of “extras” but they are great!
These were great! Used walnuts, unaltered otherwise.Will definitely make again!
These are really good! I made a 2x recipe and added an extra 1/2 cup choc chips and 1 t espresso powder (which I add to all chocolate cookie recipes). When I make them again, I’ll probably add about 1/2 to 2/3 c extra chopped nuts, because for the effort and expense, the crunch added using this quantity was a bit too subtle for me. I’m sure the cacao nibs added to the recipe, but I couldn’t distinguish them in the cookies. Not sure if you really should be able to. I also baked at 350 vs 375, which always works better for me.
