Morning Glory Muffins, a Breakfast favorite!
I have never understood those people who skip breakfast. I go to bed thinking about breakfast. It is probably my favorite meal of the day and I eat the second I roll out of bed. Our boys are just like their mama, they wake up hungry and want breakfast ASAP! I try to always keep healthy muffins in the freezer so I can pull them out for the boys when they wake up begging for breakfast. Morning Glory Muffins are a classic muffins and always a favorite!
When I saw this Morning Glory Muffins recipe in my good friend Andie’s new cookbook, Eating In The Middle: A Mostly Wholesome Cookbook, I knew I had to make them!
What are Morning Glory Muffins?
So let’s talk about these Morning Glory Muffins. They are whole wheat muffins loaded with pineapple, carrots, coconut, and raisins. Fruit and veggies all in one little muffin! They are easy to make and really easy to eat. Our boys gobbled up these morning glory muffins. I had to hide a few at the back of the counter so I could save some for the freezer! They will come in handy on busy or early mornings when our boys’ tummies are growling!

Morning Glory Muffins
Ingredients
- 2 1/4 cups whole wheat flour
- 2/3 cup granulated sugar
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 3/4 teaspoon salt
- 1/2 cup vegetable oil (I used melted coconut oil)
- 3 large eggs
- 8 ounce can crushed pineapple, undrained
- 3 large carrots, shredded (about 1 ½ cups)
- 1/2 cup raisins
- 1/2 cup unsweetened shredded coconut
- Turbinado sugar, for sprinkling on top of the muffins, optional (I added this)
Instructions
- Preheat oven to 350 degrees F. Line 18 standard muffin tin cups with paper liners.
- In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon and salt.
- In the bowl of a stand mixer fitted with the whisk attachment, beat the oil, eggs, and pineapple. Add the flour mixture and beat until just combined. Using a spatula, stir in the carrots, raisins and coconut. Scoop the batter into the prepared muffin cups, filling each three-quarters full. Sprinkle with turbinado sugar, if using.
- Bake until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes. Transfer the muffins to a wire rack and let cool. Serve warm or at room temperature.
- Note-the muffins will keep in an airtight container at room temperature for up to 4 days. You can also freeze them for up to 1 month.

Completely agreed – those who skip breakfast are not to be trusted! I could never skip breakfast, I’d be way to hungry anyway. I like the way this sounds, just having those ready would save so much time!

Do you have any recommendations for a substitution for pineapple?
These look delicious and I’ve had morning glory muffins on my mind lately! I always like the idea of freezing muffins, but how do you keep them fresh tasting once you take them out of the freezer?

Easy to make recipe. The “Morning Glory Muffins” really look glorius. Its nice to combine carbs, fruits and veggies in these little cute muffins. Best for kids at breakfast time.
Made these last night for quick breakfasts for the week. My husband came home and ate 3 of them. I think they were a hit! 🙂
These sound awesome! Do you think this would work with canned peaches instead of pineapple. I love pineapple, but can’t eat it anymore due to the acidity.

Any thoughts on using honey or maple syrup instead of the 2/3c sugar? If it would work, would you use same amount or different?
I haven’t tried honey or maple syrup, but I want to! I am sure they would work! I would maybe do a 1/2 cup.
Just made these today. Worked perfectly at Denver’s altitude. Used white whole wheat flour. Also did not have unsweetened coconut and used sweetened for 1/2 the batter (we all don’t like coconut). Did not bother with the stand mixer, just whisked the pineapple, oil and eggs before adding flour. They are light and not too sweet. Just delicious. Thanks.
What do you think about a substitution of maple syrup or honey for the 2/3 c granulated sugar? Just curious if that would work and how much would you use?

If i just use regular white plain flour for this recipe is it ok and can i leave out the rasins and put in some walnuts

I make these very often. Everyone loves them. I use half all purpose flour and half whole wheat flour. I also use golden raisins.

Great recipe but with the crushed pineapple I don’t think you need any added sugar
Made these and my husband loved them, my toddler loved them, and I loved them. I think next time Ill cook them a little less because they got a little dry but otherwise they were wonderful and I will plan to make them again!

I’m a little late to the party, but just made these today and they are amazing. I’d like to make this into a birthday cake and am wondering if you have a recipe for that or if I should just make enough batter and put it into cake pans and add a cream cheese frosting?

I am going to try this as a cake recipe; I want to put a layer of cheesecake in the middle and then make a cream cheese frosting, maybe with a dollop of caramel sauce mixed in. I am really wanting to try these with some orange juice in the batter; maybe orange extract would work. These are my favorite muffins!

Just made these yesterday! Added a little extra raisin, coconut, and carrot. Also added walnuts! Super yummy! I’m wondering how they would turn out with some apple instead of coconut?? DId put the sugar on top! … I love the scone recipes you have also! Soooooo good!

Sure, just adjust the baking time. It will take longer.

Can i use sweetened coconut? If so, do I reduce sugar at all?
I thought I would experiment a little to try to make them a little healthier. I replaced the sugar with 1/2 cup of honey and used 1/2 cup of apple sauce for the oil. I also used half the flour as white flour. Flavour is good but Unfortunately the texture did not turn out very well. I noticed when I was filling the muffin tin that the batter was still pretty loose. I probably should have added more flour at that time but decided to let it go. The texture is more sticky and not like a muffin. Next time I will try using the ingredients as listed. ♀️
I have tried several morning glory muffin recipes, and this is my favorite yet! I did 1/2 c sugar instead of 2/3 c sugar, diced pineapple instead of crushed pineapple, and omitted raisins. Not too sweet, perfect for breakfast for our toddler.
