Easy Mexican Rice Bowls on twopeasandtheirpod.com A quick and easy weeknight meal!

We have been eating a lot of Mexican food lately. Pregnancy has thrown off my tastes and food desires, but Mexican food has been a staple. It always sounds good to me. Josh has been making me a lot of quesadillas, burritos, and enchiladas. When he made Cilantro Lime Rice to take to a party, I asked if he could make a large batch for us to have at home. I used the cilantro lime rice to create a Mexican Rice Bowl.

Josh always cooks dinner, but unfortunately he is not home during lunch time, so I am on my own. I usually don’t feel like cooking, so my meals have been interesting. When I saw the cilantro lime rice in the refrigerator I decided to make a Mexican Rice Bowl. I added black beans, tomatoes, red onion, cilantro, and avocado to the rice. I squeezed fresh lime juice over the entire dish for an extra kick of citrus.

This was the best lunch I have had in a long time. It really hit the spot, plus it was beyond easy to make. My kind of meal! I know this will be a regular meal at our house. Mexican Rice Bowls are fun and easy to make. Feel free to add cheese, chicken, fish, or any other toppings you like. And yes, I realize I served my Mexican Rice Bowl on a plate, but I usually eat it in a bowl. I just wanted you to see the entire dish:)

  • 1. Add cilantro lime rice to a bowl or plate. Top with black beans, tomatoes, onion, cilantro, and avocado slices. Squeeze fresh lime juice over the entire dish. Serve warm.

  7. I love Mexican food! I think I’m going to have to try this. It’s one of those make ahead meals for the busy days ahead. I’m going to add some grilled chicken too. Or better yet what about a burrito bowl party with some friends? You could have a whole bunch of toppings for the rice and people could choose what they want. This is a very versatile and simple dish!

  8. oh my gosh, dishes like this are my favorite! I plan big taco salads/bowls at least every 2 weeks in our house. They’re so easy, fast, and delicious!

  10. This looks delicious, and so simple! I would love this for dinner, lunch or anytime of day. Thanks for sharing, and have a great weekend.

  11. It’s funny how a pregnancy will do that and even more ironic that the foods you craved end up being their favorites while they are growing up 🙂 This will be perfect for Cinco de Mayo!

  12. I LOVE rice and black beans..one my new favorite foods 🙂 I’m always home alone for lunch too, and this looks like it would be perfect!! Hope you’re feeling well and taking good care of yourself. xoxo

  13. I seriously LOVE this. Me and my ex roommate used to make ‘taco salad’ once a week, which was kind of the same idea but with crushed tortilla chips in the salad (yeah, not so healthy I guess). But the cilantro and lime seem like they’d brighten up the flavors, the perfect kick!

  14. Mexican is definitely one those flavor profiles that always sounds good to me as well…unless it’s covered in grease! Which is why it’s much better to make at home, in my opinion. This looks delicious!

  15. Look so tasty and refreshing. This is one of my favorite types of go to meals. Perhaps its my obsession with limes 🙂 YUM!

  16. Simple and delicious, my favorite combination! Jared and I feel like we eat a lot of Mexican food, too. It’s just so good. It will be even better when tomatoes are in season locally.

  17. Beans and rice are a classic combination and this is a great fresh and healthy way to do it.

  18. We have a local chain here called Taco Time – very different than Taco Bell. I always get the Fit Hit bowl which looks an awful lot like this, although this is so much better. I love that combo and could be happy eating that for lunch everyday!

  19. This is awesome. Next time I make rice I am making extra just so I can have a fresh easy meal like this the next day. Good stuff, looks so fresh!!

Hope you are feeling good… 🙂

  20. you know i have a special place in my heart for black beans and rice – was the first meal The Prof cooked for me when we ‘were not dating’ – great dish!

  21. Sounds delicious and I like the light aspect of this particular Mexican dish. I craved Mexican flavors with both of my pregnancies. It’s funny how so many ladies are saying that as well.

  22. One of my favorite meals is the vegetarian bowl from Chipotle. Love your Mexican rice bowl.

  23. I made this for dinner last night. Wow! Thank you so much for this recipe! My husband was only about two bites into his dinner when he asked if we could have this again soon, ‘like tomorrow!” LOL
I added some spices to the beans as they heated on the stove, and there was a spoonful or two of salsa over the top. This rice and this idea will become one of our go-to recipes for something fast and delicious.

  24. Kudos to you for cooking while you’re pregnant. My first four months I got by on Caffeine Free Coke and Brown Sugar Poptarts I bought at the Twilight Zone in the BYU Bookstore. Anytime I tried to cook I felt like I was going to turn inside out. Ugh. Just the memories!!

    1. Cooking hasn’t been easy. Josh has been doing most of the work. I am spoiled:)

  25. This was a signature dish in our home when I was growing up. We always had beans and rice… and on nights mom was too tired to cook, we would make different variations of this dish.

Cooked and diced squash or zucchini would be good mixed in as well!

  26. I lived in Baja Mexico for a few months a while back and I think I ate this for lunch pretty much every day!

  27. Yum! This is one of my all time favorite meals. Isn’t the little addition of cilantro and lime to the rice just perfect??

  28. This looks soooo good! And I love the fact that you don’t measure. The only time I measure is when I’m posting a recipe; otherwise, it’s a pinch of this and a little bit of that. I’m just not into the exact measurement thing, I guess. : )

  29. I know I’m a little late here, but I just had to say THANK YOU for this recipe! We tried it tonight for the first time and the first words out of my husbands mouth were “This is right up there as maybe one of my favorite meals ever.” followed a few minutes later with “I have GOT to get more of this”. Thank you, thank you, thank you!

  30. I just found this recipe via Pinterest.
How can something so simple taste so delicious?
This was just like eating a Chipotle veggy burrito bowl.
I was amazed. Even my 2 picky kids loved it!

    Thankyou!!!!
