School is out for the summer and the neighborhood kids are out and about. We live across the street from the park so we see lots of kids coming and going. Caleb loves sitting on the porch so he can wave to everyone. I like sitting on the porch so when friends walk by, I can give them cookies. I made Lemon Blueberry Pudding Cookies and passed them out to everyone that walked by. Cookies are a great conversation starter! I love sharing cookies, but I love catching up with our neighbors even more. It’s great to see everyone after hibernating for the winter.

I love making pudding cookies because they are soft and stay soft for days. Plus, everyone loves them. Every time I make a pudding cookie, they get rave reviews. A few of my favorites include: Oreo White Chocolate Pudding Cookies, Butterscotch Pudding Triple Chip Cookies, and Vanilla Pudding Chocolate Chip Cookies. These Lemon Blueberry Pudding Cookies are also at the top of my list. They are delicious!

I used a lemon pudding mix to make the cookies. I also added in the zest of one lemon to bring out the lemon flavor. I added in dried blueberries because lemon and blueberries are a match made in heaven. The dried blueberries are sweet and add a nice chewy texture. I also threw in some white chocolate chips because chocolate is always a good idea if you ask me!

These cookies are soft and chewy with a refreshing lemon flavor. Josh loved them and so did all of neighbors that walked by.

Lemon Blueberry Pudding Cookies

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a Silpat baking mat and set aside.
  • In a small bowl, rub the granulated sugar and lemon zest together, using your fingers, until fragrant. Using a mixer, beat together butter and sugars until creamy. Add in lemon pudding mix, eggs, and vanilla extract. In a medium bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the dried blueberries and white chocolate chips.
  • Drop cookie dough by rounded tablespoons onto prepared baking sheet. Bake for 10 minutes, or until slightly golden around the edges and set. Remove cookies from oven and let cool on baking sheet for two minutes. Transfer to a cooling rack and cool completely.
  • Note-you don't need to make the pudding, just add in the dry pudding mix. These cookies will stay soft for 3-4 days. Store in an air-tight container on the counter.

    1. It is a boxed pudding mix, a powder. I don’t know what you can use instead. Sorry!

    1. I haven’t tried fresh blueberries, but I am sure they would be good. They would probably be best eaten the first day or two.

    1. Fresh blueberries would work. Frozen blueberries might turn the cookies purple, but you can try it!

  29. These cookies are wonderful!!! So moist and flavorful. I liked your idea about including a red fruit with the blue berries. I used dried red raspberries, substituting for half of the blueberries. Lemon and blueberry flavors – match made in heaven! Lemon and raspberry flavors – ditto! Lemon, blueberry AND raspberry flavors all together?? A-MA-ZING! This recipe is a keeper!

    These cookies are delicious. Is there a way to revise this recipe and make it gluten free. I have seen gluten free Bisquick baking mix. Haven’t tried it yet. Probably wouldn’t need baking soda.

  31. I love your blog and have made many of your recipes and every one of the has been great so far. I do have one question though how do you get your cookies to spread out? While mine taste great they don’t look as pretty as yours do. They seem to stay pretty compact mounds not sure if it has to do with the cookie scoop I use or what might be the issue.

  33. I’ve made these twice and everyone’s loved them! However I haven’t been able to get them as nice and flat as the ones in the picture.

    For the second batch I tried reducing flour by 1/3rd-1/4th cup or so and they’re still pretty puffy. Anyone have any suggestions?

  38. Making these right now and they smell AMAZING! But the batter turned out much too dry and cookies are falling apart and not turning out much like cookies at all. Adding a bit of butter now to moisten!

  39. These tasted good but were so soft we had to scoop them up. One of my cookie-baking friends said I should have used only have the amount of butter & the rest should have been shortening. Sounds yucky but worth a try perhaps. I won’t make them again.

  43. I’ve made these and they’re a BIG HIT! I’ve changed them up a bit and used white vanilla chip with the blueberries and also used cranberries with the white vanilla chip! Brought them to work and family gatherings!They’re perfect for a baby shower and wedding shower! Love these cookies!

    I love this recipe and have made it several times. It’s always a huge hit. The only thing I do different is add juice of 1 lemon to the batter. I’ve also made this gluten free.

  45. Hi Maria! I just made these cookies and they taste very good but they’re thick, not flat like yours in the pictures. Should I have flattened them a bit before baking?
    Also, I bought a sugar free lemon pudding mix and it’s 1oz as opposed to the standard 3.4oz box. So according to the recipe, I’d have to buy 3 boxes? This doesn’t seem right given the boxes are the same size.
