Green Beans with Lemon and Shallots

I am a daddy’s girl. I have a lot in common with my dad-we both enjoy sports, baking/cooking, flowers, and I even inherited his stubbornness:) The one thing we will never agree on-vegetables. I love all veggies. I really can’t think of one that I don’t like. My father is the exact opposite. The only vegetables he will eat are corn and green beans-oh and potatoes-he is from Idaho:) I have tried for years to convince him how wonderful and tasty veggies are, but he is still not buying it:)
My dad was visiting last week so I made green beans to make sure he got at least one serving of vegetables for the week:) I jazzed the green beans up with fresh lemon juice and shallots. I sauteed them until they were bright green. I like my green beans to have a nice crisp crunch, so I was careful to not overcook them.
My dad had a healthy serving of green beans for dinner. I am glad he got some greens into his diet while visitng.
Try this easy, healthy side dish. Green beans go well with just about every meal and they are so simple to make.
Green Beans with Lemon and Shallots
Ingredients
- 1 pound green beans wash and snap off the ends
- Drizzle of olive oil
- 1 Tablespoon minced shallots
- Juice of one lemon
- Salt and pepper to taste
Instructions
- In a large saute pan heat the olive oil. Add the shallots. Cook for one minute.
- Stir in the green beans. Pour the juice of one lemon over the green beans in the pan. Toss the green beans and cook until tender, but still crisp.
- Season the beans with salt and pepper. Serve warm.

These look delicious! I love the idea of shallots and lemon. Sometimes you just need to change it up, plain steamed veggies can get old for me. I bet these have a ton of flavor! Great photos – those light boxes must be working out for you. Everything is so bright and crisp!

When you love to cook, sometimes it’s easy to forget that simple is best. It brings the natural flavors of the veggies out. Looks delicious!

Sarah-my hubs bought me a light studio for Christmas. I work ten hour days so I rarely get to shoot in natural light. I guess the lights are working:)

This is such a simple but so flavorful way to prepare green beans. I know I would love it. My boyfriend, on the other hand, is kind of like your dad… he’ll pretty much just eat corn on the cob (it must be on the cob) and broccoli. And then he does okay with salads – plain lettuce (no spring mix), peppers, cucumbers, and red onion.
This sounds really good. My kids make quite the mess with green beans- they believe they can only eat the beans inside, so they open them up!

I like the way Americans “dress up” French green beans. In France, we tend to steam them and add a few flat parsley leaves. You could add butter if you are not serving them along a meat/fish “en sauce”…but that’s pretty much it. I have come to dressing mine more and more and as a result, my children are eating them with enthusiasm. Just that is worth the extra effort!

wow the green beans looks really plump! I’m not a big fan of veg either, I eat them cause my hubs forces me to.
the green beans look great, but what I’m really curious about is the light studio you mentioned in a previous comment. Can I ask what you’re using? I’m consistently struggling with taking pictures at night. sometimes i succeed, sometimes they look terrible.
