Easter and Spring Dessert Recipes

I am looking forward to Easter weekend, even though it is still cold in Utah. It snowed this week and not a light dusting either. I am talking thick, heavy snow. We had to shovel and scrape our cars…ok, Josh did all of the dirty work, but still. I was not happy. I am ready for SPRING! I hope it warms up soon.
We are talking Spring desserts today at Two Peas and Their Pod. If I can’t have sunshine, I can at least enjoy spring sweets to help brighten my mood. If you are looking for an Easter or Spring dessert to WOW your family and friends with, here are a few suggestions:

I love them all! Josh requested the Lemon Loaf Cake for our Easter dessert. We are making Lemon Cottage Cheese Pancakes with Strawberries for brunch, so we will be on lemon overload, but I am ok with that:)

This is just what I need to inspire me since I’m in charge of dessert this year!
I have absolutely no plans for this weekend, but I already know that I’ll probably be baking something…. Usually I go through all my new bookmarks on Friday and pick something then, all of these options sound like great contenders though! It might be difficult for me to pick just one this weekend!
I would be perfectly OK with being on lemon overload too:D

I love all the citrus options! Now that it’s warming up a bit in New Jersey I’m all about fresh spring flavors and bright colors. I already have a white chocolate pie in mind but a nice lemon cake would go great with it!
I have two toddlers so we are doing a playful dessert: Dirt Cake! Complete with gummy worms! I figured my little munchkins would enjoy their flower pot desserts.Have a Happy Lemony Easter!

I love all your Easter Lemony suggestions. I have plans to make the girls lemon cupcakes this weekend so we can have Sunday after the Easter egg hunt. I love this time of the year.

I am making your Oreo cheesecake bars and a carrot cake for Easter. I made the Oreo bars last month for a party and I was amazed at how good they were!
It’s cold here too. Even though I dream about crisp salads and fruity desserts the reality is Im still am using my crock pot!

Yummy list of desserts !
My family requested I make strawberry shortcake for Easter dessert so I made a yellow cake in a jellyroll pan lined with parchment paper, cut up, then lightly sugared 4 lbs. of fresh strawberries and I will whip a quart of heavy cream about an hour before Easter dinner. Have a very blessed Easter !
