I was in Austin this week for a work trip. I love trying new restaurants in new cities, but there is no place like home. Nothing tops a meal from my own kitchen. After a few days of indulging, I am always ready for simple, healthy food. I am going to make this Cucumber, Avocado, and Feta Salad for lunch today. I am craving fresh food! Plus, I am feeling lazy and this salad is easy to make!

To make this salad, you only need five ingredients and five minutes! Who said tasty food had to be complicated? I love this simple salad and it is perfect for summertime!

You can make this salad with your eyes closed, it is that easy. Well, maybe peek a little, I don’t want you to cut yourself while you are chopping the cucumber and avocado:) Stir together chopped cucumber, avocado, feta cheese, fresh lemon juice, and dill. Season with salt and pepper and dig in with a fork!

Josh loves this salad too! The last time I made it he conveniently came home for lunch right as I sat down to eat my salad. Of course, he wanted a bite…and then another bite and another bite. Good thing it is easy to make. If you run out, it is easy to whip up more! This salad is a staple at our house. I want to eat it all summer long!

Cucumber, Avocado, and Feta Salad

You only need 5 ingredients to make this simple summer salad! It is great for lunch, dinner, and perfect for summer potlucks!

Ingredients
  

  • 1 large seedless cucumber chopped
  • 3 large avocados pit removed and chopped
  • Juice of 1 lemon
  • 1/3 cup crumbled feta cheese
  • 1 tablespoon finely chopped fresh dill
  • Salt and black pepper to taste

Instructions
 

  • In a large bowl, combine cucumber, avocado, lemon juice, feta, and dill. Gently stir to combine. Season with salt and black pepper, to taste. Serve.
  • Note-this salad is best the day it is made.

  15. Made this tonight with dinner…..except added sliced cherry tomatoes and instead of dill and feta I used fresh cilantro and cotija cheese as substitutes because that’s all I had on hand….it was soooooo good!! Just delicious. Loved by all. ; )

  23. So yes! Sooooo YES! I tried this tonight – a bit modified – but sooooo, sooooo, soooooo good! Wow! I am a recent avocado person (had it the very first time in 2012 in California and now again this past winter at age 65 – very soon to be 66!) thanks to my two sons and one daughter-in-law. And am experimenting with it. I find the taste of avocado very rich, have had some really BAD avocados I have purchased and so have been approaching the whole avocado thing with a great deal of caution! Today I picked up two avocados (organic) at a store where I do not always shop, (because the one I do frequent only has avocados in bags of 6-8, way to much for me). I picked up two avocados with the intention of making this but I only wanted to use one in the recipe! I had mini cucumbers and used two of them. Added 3 spring onions and 1/4 cup crumbled feta. I used the left over of a mix of some lemon, olive oil and crushed garlic that I had made for an eggplant recipe yesterday. I did not add any salt, or pepper and I also did not use the dill (I forgot the recipe here USED dill and did not have any) and it is absolutely scrumptious! I will make it again as per the recipe once my brother returns home from overseas or if we have friends over who like to try new things in future. Until then I will go with what I did today because it is absolutely delectable! I just HAD to share as I am so happy that it all worked so well right down to a really gorgeous green coloured perfect avocado! Thanks for this fab recipe! I am going to share it! Oh and yep, it is pinned! 🙂

    Wanted something fresh for dinner and came across your recipe. Oh my gosh, it’s absolutely delicious!!! At first I thought a tablespoon was alot of Dill, don’t really like Dill, so I tasted it, couldn’t taste the dill so added more to equal a tablespoon. Wow, so delicious, who knew!
