Pin ItI am always on the lookout for new cookie recipes. Awhile ago, I saw a couple of cookie recipes that used crisped rice cereal. I love cereal and cookies so why not enjoy them together?I started with my favorite oatmeal chocolate chip recipe. I stirred in Rice Krispies and waited to hear the snap, crackle, and pop. I was a little disappointed, there was no sound coming from my cookie dough. I guess I needed to add milk, but I didn’t want a soggy dough, so I pressed forward:)
The cookies baked up nicely. I really liked the added crisp from the cereal. They were a fun addition! I am glad I tried them. And since there is cereal involved go ahead and eat these for breakfast, I won’t tell:)

Crispy Chocolate Oatmeal Cookies
Ingredients
- 1 cup all-purpose flour
- 1/4 tsp. Salt
- 1/2 tsp. Baking powder
- 1/2 tsp. Baking soda
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup softened unsalted butter
- 1 egg
- 1 tsp. vanilla
- 1 cup old fashioned oats
- 1 1/4 cups Rice Krispies cereal
- 1 cup chocolate chips
Instructions
- Preheat the oven to 375 degrees. In a medium bowl, whisk together the flour, salt, baking powder, and baking soda. Combine butter and sugars in your mixing bowl. Beat until smooth. On low, add in egg and vanilla extract. Beat until combined.
- Slowly add in the dry ingredients. Stir in the oats, chocolate chips, and cereal. Don't over mix. You don't want to crush the cereal too much.
- Scoop dough into balls and place on a cookie sheet lined with Silpats or parchment. Bake for 10-12 minutes! Allow to cool for a minute on the cookie sheet. Move to a cooling rack and enjoy.

These cookies were easy to make and were really good. My grandson loved them.

I make this recipe but in gluten free form and they are a huge hit. The Rice Krispies make it! I’ve also done them with butterscotch morsels instead of chocolate. Toffee bits with chocolate chips or chocolate chips and butterscotch morsels. All very good variations.

This recipe turned out horrible. I followed the recipe completely, the dough turned out dry and the cookies were puffy and cake-y. They did not taste good and the texture was awful. I followed the recipe so if I did something wrong please enlighten me.
Love these cookies! They can also be used as granola bars which are great!
Everyone who eats these cookies always asks for the recipe. However, I have decreased the sugar to 1/3 c. of each of the sugars but added 1/2 c. of organic brown rice crisps for a healthier version … and lately, I have used grass fed butter, too.

These are delicious! I love the unexpected crunch that the crispy rice cereal brings to the cookie. With crispy cereal and oatmeal as two of the ingredients, sounds like a breakfast stand-in to me!!
In this senior’s teenage years, I remembered one of my favorite cookie recipes combined oatmeal and rice krispies. That recipe was lost many years ago so I am so glad that I found your recipe which has undergone some minor changes as all my friends and their kids just love this recipe.
Instead of rice krispies, I use Nature’s Path’s koala crisps or sprouted brown rice crisps but increasing the amount to one and a half cups and eliminating the chocolate chips – sometimes adding raisins or dried cranberries. Since the family is trying to decrease the use of sugar, I just used 2/3 c. of combined sugars instead . Definitely a keeper
These cookies were so dry and crumbly I couldn’t get them to stick together. Finally got them in the oven and they just fell apart in places. The cookie needs another egg.
I had Rice Krispies, chocolate chips and butterscotch chips left from making Scotcheroos for Easter. I found this recipe and it was perfect! The butterscotch chips were a nice addition. I love how crispy and chewy these turned out!

Yum, these are a must try. Not sure if it was because I added some chopped walnuts, but they didn’t spread while baking. So I just pressed the ball almost flat and voila. Yum.
Turned out great! As a kid I remember my grandma would often included Rice Krispies in her cookies. Brings back fond memories.
