How to make Belgian Waffles from scratch

Waffle Sunday Tradition

Every year, we host our neighborhood 4th of July breakfast and we make our favorite Belgian Waffles for about 150 people. The waffles are always a huge hit. Josh makes these easy Belgian waffles almost every Sunday for our boys, so he has had plenty of practice. It is easy for him to make them for our family or the entire neighborhood.

Waffle Sunday is a weekly tradition at our house. We love this Belgian waffle recipe because it is easy to make and the waffles turn out perfect every time, even when you are making them for a big crowd. This is the best waffle recipe!

What is the difference between a Belgian Waffle and a regular Waffle?

You can’t beat a good Belgian waffle and these waffles are the very best. Josh has been making this waffle recipe since we got married. Waffles are Josh’s specialty. He doesn’t like me to help because he is the waffle master. I am fine with that, I get to stay in bed while he makes me breakfast! WIN!

To make Belgian waffles, you do need a Belgian waffle maker, with a deeper, larger grid pattern. You want the waffles to be nice and thick. We like this Belgian waffle maker. Belgian waffles are crispy on the outside and soft and tender in the inside. We love the deep squares because they can hold lots of syrup and toppings:)

Regular waffles are thinner and tend to be more fluffy and not crisp on the outside. We prefer Belgian waffles, because they are fluffy AND crisp. The best of both worlds. Belgian waffles are the king of all waffles:)

How to make Belgium Waffles

How to make Belgian Waffles from Scratch:

  • Josh uses a mix of all-purpose and whole wheat flour to create a hearty waffle that is still light and fluffy.
  • Buttermilk is a must. Buttermilk creates a thick batter which is important so the inside of the waffles stay soft and the outside can become crisp.
  • Brown sugar also helps the waffles get nice and crispy and adds a slight sweet, caramel flavor.
  • Make sure the buttermilk, melted butter, and eggs are at room temperature before mixing together. You don’t want the the butter to clump up.
  • Don’t overmix the batter. If you do, you will end up with a tough waffle.
  • Make sure your waffle iron is hot before adding the batter. We highly recommend this waffle iron. It makes perfect Belgian waffles every time.

Tips on How to Serve Belgian Waffles

  • Serve hot Belgian waffles with whipped cream, berries, and pure maple syrup. Sometimes we like to add our special brown butter buttermilk syrup. It is such a treat!
  • Keep the waffles warm by putting them on a baking sheet in 200 degrees Fahrenheit oven until ready to serve.
  • If you want to make the waffles the day before, let them cool completely and store them in an airtight container or Ziploc bag. Put them on a baking sheet in a 200 degree Fahrenheit oven to warm them up and crisp them up.
  • These waffles also freeze beautifully. We always have a stash in our freezer so our boys can easily enjoy them during the week. To reheat, pop them in the toaster. The toaster will heat the waffle and keep it nice and crisp.

Ingredients

Instructions

  • Preheat waffle iron according to manufacturer's directions.
  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and brown sugar. If you have any brown sugar clumps, use your clean hands to unclump the sugar and whisk again.
  • In a medium bowl, beat together eggs and melted butter. Stir in the buttermilk and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Don't overmix.
  • Spray the waffle with nonstick cooking spray. Pour the recommended amount of waffle batter onto the hot waffle iron. Close the waffle iron and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.

  1. You are so ambitious to make make breakfast for 150 neighbors!!  Love that kind of hospitality ❤️. Thank you for the recipe and I will be trying it.  Happy 4th

  2. If you have any waffles leftover dry them out overnight and then the next day dip them in dark Belgian Chocolate. OMG….its amazing!

    1. Yes, you can use all all-purpose flour. The texture will be a little different, but still good! Enjoy!

  3. SO festive!!!! Nothing better than waffles in the morning! Your party looked epic 🙂 That was A LOT of waffles!!

  4. 5 stars
I just found an awesome 1:1 GF flour, which means I can make these GF, which means my life is complete. LOL! 🙂 Yea to buttermilk!

  5. Oh I have to start adding brown sugar to my mix. Never tried that before. Great tip! These look so festive. I hope your party was FABULOUS! XOXO!

  6. These waffles are gorgeous and look so fluffy! I can not believe you guys made these for 150 people!! That is so impressive!

  7. If I make them a day ahead for a crowd, do I store them at room temperature? How long would I reheat them in a 200-degree oven?

    1. Yes, room temperature is fine and it will probably take about 15 minutes in the oven for the baking sheet of waffles to warm up and crisp up.

  8. Will most definitely try them.  Can you recommend a toaster that will crisp these up with drying them out and equal crispness on both sides.  On the hunt for a good toaster!!!
    Thank you
    Laura

Really, really good!! I didn’t use the whole wheat flour, just doubled up the plain flour. Great taste!

  10. I really want to make these waffles(they look delicious!) but I don’t have any buttermilk. Will soured milk (milk mixed with a little vinegar) work?

    1. You can use regular milk too. Mine are always super fluffy inside and crisp outside with regular milk. You can also whip the egg whites separately and fold them in at the end, which will make for a much fluffier waffle. It depends on what you are going for–light fluffy, and crisp, or a denser heavier waffle. Both are great!

Best waffles ever! We make Belgian waffles every year for Christmas day and have used different recipes but this is the best one so far. I have made waffles with yeast before but they are rather heavy. Never made them with buttermilk before but I will from now on. These waffles were so easy to make and light and fluffy. My boys loved them, too. I also like that you don’t have to make the batter in advance. Two thumbs up!

I made these for dinner tonight. My 5 year old son has requested a new family tradition, ‘Waffle Wednessay.’ The family loved them! I used cup 4 cup gluten free flour. I soured the milk in place of buttermilk. They were delicious.

Wow, just WOW! The way these came out was amazing. Fluffy and light with a golden brown crispy surface.

I thought these were ok, but a little flavorless (which is strange because the recipe is nearly identical to my favorite waffle recipe.)

    1. Double the vanilla for more flavor. It really makes a difference without making it overpowering.

Made these (subbed plain kefir for the buttermilk) and I don’t think I can ever make reg waffles again. SERIOUSLY GOOD.

I have been looking for a good waffle recipe. I tried using my buttermilk pancake recipe but, it just didn’t cut it. I did A LOT of reading. After reading this post with Josh’s tips; buttermilk a must, etc. I had to try. I just made the waffles and they were great. I wanted to wait until we tried them. I don’t care for reviews where the picture is commented on. My wife and I loved them. I have been to Brussels several times so consider myself a connoisseur when it comes to Belgian waffles and chocolate. 🙂 Josh, you the man! The only thing I am going to try next time is to make them with only 1/2 cup of whole wheat flour (1 1/2 white). Other than that little experiment, I have found my recipe.

Great recipe! Used kefir instead of buttermilk and they turned out great! Got 5 waffles out of this in our Toastmaster flip-over waffle maker.

I was in the mood for waffles tonight, however, my recipe had to beat egg whites seperately and the batter also has to rest for 30. Well worth the effort but I wanted something quick tonight. A google search lead me here, it looked close enough to my recipe that I knew they would be delicious! I was right!!! So delicious even with the 1 adjustment I made, by adding 1/4 c cirn flour and 1/4 sourcream also used all AP flour. My ingredients were not at room temp either. My waffles were crispy and soooooo pillowy soft on the inside, so flavourful!!!! I have cooled and wrapped left overs for the freezer as this batter made 9 waffles in my iron. I only had 2, man that willpower Thank you for a great recipe!!!!

    1. So Elle, I know I’m late to this waffle party, but which recipe do you prefer or use most? Your previous recipe with the beaten egg whites or this one? Curious since my recipe calls for beaten eggs whites as well but I was considering using this recipe instead for Christmas morning waffles.
      Thanks!

I made these tonight, they were very good. I added half cup cornstarch, it’s used on another waffle recipe and they turn out crispy like my son likes. I used white sugar because to be honest, I was afraid to try brown. What does brown sugar do?

My family love this recipe. After trying quite a few. I always replace the buttermilk with yoghurt and milk (never seem to have buttermilk) and substitute the white flour for gluten free. Just to lighten the gluten load. And I love the addition of wholemeal which just gives the waffles depth. Works perfect everytime. Thanks!!

  21. I know your Belgian waffles are good because everything you guys make is awesome, but I was in Belgium this summer and true Belgian waffles are not anything like we are accustom to in the US.

I was smitten so I looked them up and actually Belgian waffle “batter” is made with yeast and sugar pearls. Absolutely no syrup necessary although strawberries and whip cream  are “icing on the cake”, but I could eat them plain everyday of the week

  22. Hello! Thank you for sharing your waffle recipe. We are going to use it for our Ward Christmas Party next Saturday. I was ordering if you or your husband have any tips for making them for 200 people 🙂  Thanks  in advance!

Amazing recipe. My daughter and I were on our own, tonight, and we both had a desire for waffles. Our maker was long gone, so I even bought a new one for the occasion. I was looking up various recipes and found this one. It tasted every bit as good as how my mind put the ingredients together. Thank you!

  24. I found a Krups waffle make at a thrift store for $15 that makes 4 good size Belgian waffles. It is about $59 I think retail and is great if you want to make a big batch. I agree with the addition of sugar pearls.

  25. Can I make the batter the night before? I was hoping to do a make-your-own-waffle station for a baptism party this weekend.

    1. Yes, or you can make the waffles the night before and heat them up in the oven at 200, they will crisp back up!

  26. I clicked on the waffle maker you recommend, it shows the waffle plates are ceramic. Then in the Question section and User guide they say not to use any oil in the recipe or on the plates because it will gum them up and ruin them. Input?

  27. I’m thinking of making these for my son’s mission farewell. Do you have any additional tips for reheating? Do they have to be in a single layer in the oven or can I stack them? Do you use a cookie sheet? How many waffles do you make for 150 people? 150? Sorry so many questions. Thanks in advance.

    1. We put them in a single layer on a large baking sheet. The Belgian waffles are thick and big so not everyone needs a full waffle, especially if you are serving other foods with the waffles. I hope that helps!

  28. excellent recipe! I use 2 cups of King Author Gluten Free Flour. They come out great every time. Sometime I add orange rind….it is a wonderful addition. Thanks!

  30. listen: waffles freeze well. they’re known for it. but sometimes they can be a little dry after freezing and being toasted. clearly i’m a bit picky especially when it comes to texture.

but no such issue with this recipe. even the few waffles that i had slightly overcooked were fluffy and moist once re-heated in the toaster oven after a week in the freezer.

    i’m thrilled with this recipe.

i used butter instead of oil because it’s who i am. and i added almost double the vanilla (and used vanilla paste rather than extract). everything else was the same.
