Easy Spinach Salad

Last week I went out of town for a few days to attend an event with Thermador. I had an amazing time and will write a post about my trip soon. While I was gone, Josh made this easy spinach salad for dinner. I am pretty sure he ordered pizza to go with his salad, but at least he got his veggies in:)

Josh used what we had in our refrigerator to create his side salad. He added tomatoes, cucumber, red onion, red peppers, and Atheno’s black peppercorn feta cheese. He drizzled balsamic vinegar and olive oil over his green salad and that was it. This salad is easy and goes well with any meal-even take out pizza:)

While I was on my Thermador trip, Josh started our kitchen remodel. Yes, you heard me right, Two Peas and Their Pod is getting a new kitchen! I am very excited, but a little nervous. Our house is a construction zone and will be for a couple of months. I am trying to keep the end goal in mind so I can survive the kitchen remodel. Luckily, we are remodeling in the summer so we can grill out and eat simple salads. Our neighborhood has also started a sign up sheet to have the “cooking couple” over for dinner. We will do the cooking, we just need to use everyone else’s kitchens, works out nicely for us and them:)  I will be posting updates along the way, so stay tuned!

Easy Spinach Salad

Fresh spinach
Tomatoes, chopped
Cucumbers, sliced
Red onion, sliced
Red pepper, chopped
Feta cheese (Josh used Atheno’s Black Peppercorn Feta)
Balsamic vinegar and olive oil
Freshly ground black pepper, if desired

Add fresh spinach to a salad bowl or plate. Top spinach with tomatoes, cucumber, red onion, red pepper, and feta cheese. Toss. Drizzle balsamic vinegar and olive oil over the top of the spinach salad. Add freshly ground black pepper, if desired. Serve.

    the salad looks so refreshing. i grew-up eating feta cheese, so any recipe with feta cheese has won my heart over. :)

    Kitchen remodel is FUN. took about 2 months for ours. Used convection oven, electric skillet, microwave. AND the grill, too. Have fun!!
