Ingredients
For the salad:
1English cucumber,sliced lengthwise and cut into 1/4-inch slices
5radishes,thinly sliced and halved
1 15-ouncecan of white beans,rinsed and drained
1/4cupfinely chopped dill
1/4cuppickled red onions or thinly sliced red onion
In a large bowl, combine the cucumber, radishes, white beans, dill, and red onion. Set aside.
In a small bowl or jar, combine the olive oil, lemon juice, red wine vinegar, garlic, honey, Dijon mustard, salt and pepper. Whisk until well combined.
Pour the dressing over the salad and toss well. Taste and season with additional salt and pepper, if necessary. Serve.
