White Bean Cucumber Salad

This quick and easy salad is made with white beans, cucumbers, radishes, red onion, fresh dill, and a simple lemon dressing. It is the perfect summer side dish!

Ingredients

For the salad:

  • 1 English cucumber, sliced lengthwise and cut into 1/4-inch slices
  • 5 radishes, thinly sliced and halved
  • 1 15- ounce can of white beans, rinsed and drained
  • 1/4 cup finely chopped dill
  • 1/4 cup pickled red onions or thinly sliced red onion

For the dressing:

Instructions

  • In a large bowl, combine the cucumber, radishes, white beans, dill, and red onion. Set aside.
  • In a small bowl or jar, combine the olive oil, lemon juice, red wine vinegar, garlic, honey, Dijon mustard, salt and pepper. Whisk until well combined.
  • Pour the dressing over the salad and toss well. Taste and season with additional salt and pepper, if necessary. Serve.
