Ingredients

  • 3 tablespoons plain Greek yogurt
  • 3 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon honey, can use pure maple syrup
  • 1/2 teaspoon kosher salt
  • 2 cups diced apples*
  • 1 cup halved red grapes
  • 1 cup diced celery
  • 1 cup toasted pecans, roughly chopped
  • 1 tablespoon finely chopped parsley
  • Boston lettuce, for serving, optional

Instructions

  • In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, honey, and salt. Stir until well combined. Set aside.
  • In a large bowl, add the apples, grapes, celery, pecans, and parsley.
  • Add the dressing and stir until well coated. Serve plain or in lettuce cups.

Notes

You will need 2 large or 3 medium apples. I like to use Granny smith or Honeycrisp apples.
Store the salad in an airtight container in the fridge for up to 3 days.
