This easy strawberry baked oatmeal is bursting with fresh strawberries. It will remind you of the Strawberries & Cream oatmeal packets you enjoyed as a kid, but SO much better! It's the perfect make ahead breakfast recipe!

  • Preheat the oven to 350 degrees F. Grease an 8x8-inch baking pan with cooking spray and set aside.
  • In a large bowl, combine the oats, baking powder, and salt. Set aside.
  • Place 1 cup strawberries and the milk in a blender. Blend until smooth.
  • Pour the milk over the oat mixture. Add the melted butter, eggs, maple syrup, and vanilla extract. Stir until well combined. Fold in the remaining 1 cup chopped strawberries.
  • Pour the mixture into the prepared pan. Top with sliced strawberries.
  • Bake for 35 to 40 minutes or until the oats are set and lightly golden brown. Remove from the oven and let cool in the pan for 5 minutes. Cut into squares and serve.
