Ingredients
2ripe mangos,chopped
2cupspeeled and chopped jicama
2cupschopped English cucumber
1red bell pepper,seeds removed and chopped
2scallions,sliced
2tablespoonschopped cilantro leaves
2tablespoonschopped fresh mint leaves
2small limes
Kosher salt,to taste
Tajin,for sprinkling on salad, optional
Instructions
In a large bowl, combine the mango, jicama, cucumber, red pepper, scallions, cilantro, and mint.
Squeeze fresh lime juice over the salad and toss. Sprinkle with salt and Tajin, if using. Toss again.
Serve and enjoy!
Notes
I like to chop everything in 1/2-inch pieces. You can also cut them in matchsticks. Avocado is also great in this salad!
