Grilled Brie with Peaches is a fantastic summer appetizer that combines creamy, melty cheese with juicy peaches, chopped candied pecans, fresh basil, and a drizzle of sweet honey.

Ingredients

  • 1 (8 oz) wheel soft-ripened brie cheese, cold
  • 2 teaspoons olive oil, for brushing
  • 2 tablespoons honey, divided
  • 1 cup diced peaches
  • 1/4 cup chopped candied pecans
  • 1 tablespoon chopped fresh mint or basil leaves, for garnish
  • Flaky sea salt, for sprinkling
  • Crostini or crackers, for serving

Instructions

  • Preheat grill or grill pan to medium high heat.
  • Brush the olive oil over both sides of the brie.
  • Place the brie on the grill and grill for 2 to 3 minutes per side or until the brie feels warm and soft on the inside. When flipping the brie, use a spatula, being careful to not break the brie open. Don't overcook the brie or it will melt out and make a mess.
  • Transfer the brie from the grill to a platter. Drizzle with 1 tablespoon of honey and top with diced peaches, candied pecans, and mint or basil. Drizzle with the remaining honey and a sprinkle with a little sea salt.
  • Serve the brie with crostini or crackers.

Notes

The brie is best the day it's made.
