Ingredients
For the salad:
1small head green cabbage,finely chopped (about 6 cups)
Pour the dressing over the salad and toss until the salad is well coated. I like to serve with chips (tortilla, pita, or potato) for dipping!
Notes
Storing: Store the salad in an airtight container in the fridge for 3 to 4 days. The dressing will keep in the fridge for up to 5 days. If you are meal prepping, you can keep the dressing separate until ready to eat. I would also wait to add the avocado for optimal freshness. Variations: You can leave out the feta cheese. Instead of pepitas, try chopped pistachios or almonds. Garnish with fresh herbs!
