Ingredients
1cupplain Greek yogurt*
1cupfresh parsley
1cupbasil
2tablespoonschopped chives
2tablespoonsfresh lemon juice
2tablespoonsred wine vinegar
1tablespoonextra-virgin olive oil
1clovegarlic,minced
1/4teaspoonkosher salt
Freshly ground black pepper
Instructions
In a food processor, combine the yogurt, parsley, basil, chives, lemon juice, vinegar, olive oil, garlic, salt, and pepper. Blend until smooth. Season to taste.
Drizzle over salad greens or use as a veggie dip. You can also drizzle over grilled meats or roasted vegetables.
Store in a jar or airtight container in the fridge for up to 5 days. Stir well before using.
Notes
I like to use plain Greek yogurt for extra protein, but sour cream or mayo will work too. You can use a mix of whatever herbs you like. Cilantro, dill, tarragon, and mint are all good options. You can add anchovies, anchovy paste, or capers for a umami flavor. I prefer using a food processor for this recipe. You can use a blender, but you might have to stop and scrape down the sides with a spatula a few times to make sure all of the herbs get well blended.
