Ingredients
For the meatballs:
1poundground turkey,93% lean
¾cupseasoned breadcrumbs
¾cupshredded zucchini,squeeze out excess liquid
¼cupfinely chopped fresh spinach
¼cupfinely chopped red onion
3garlic cloves,minced
¼cupcrumbled feta cheese
1large egg
Zest of 1 lemon
2tablespoonschopped fresh parsley
1teaspoondried oregano
Kosher salt and black pepper
For serving:
Pita Bread
Shredded romaine lettuce
Chopped tomatoes
Red onion slices
Crumbled feta cheese
Tzatziki sauce
Instructions
Preheat oven to 450 degrees F. Line a large baking sheet with parchment paper and set aside.
In a large bowl, combine the ground turkey, breadcrumbs, zucchini, spinach, red onion, garlic, feta, egg, lemon zest, parsley, oregano, salt, and pepper. Stir well with a rubber spatula or wooden spoon until well combined.
Using an ice cream scoop or large cookie scoop, scoop about two tablespoons of the mixture into your palms (you can wear kitchen gloves, if you wish) and roll it into a ball. Place the ball on the prepared baking sheet. Repeat with the rest of the mixture, spacing the meatballs out onto the baking sheet, about 2-inches apart.
Bake the meatballs for 18 to 25 minutes or until cooked through.
You can enjoy the meatballs with a drizzle of tzatziki sauce or make a gyro. To make a gyro, take a warm piece of pita bread and add 3 meatballs, lettuce, tomatoes, onion slices, feta cheese, and drizzle tzatziki sauce over the top. Serve immediately. You can also serve the meatballs with rice or on top of a Greek salad.
