For the salad:
15ounceschickpeasrinsed and drained
1large applechopped (I like Honeycrisp)
1avocadochopped
2tablespoonsfresh lemon juice
1/4cupchopped red onion
1/4cupchopped pecans or walnuts
1/4cupdried cranberries
1/4cupcrumbled feta cheese or goat cheeseoptional
For the dressing:
2tablespoonsolive oil
1tablespoonapple cider vinegar
2teaspoonspure maple syrup
1teaspoonDijon mustard
1clovegarlicminced
Kosher salt and black pepperto taste
Instructions
In a large bowl, combine the chickpeas, apple, avocado, lemon juice, red onion, nuts, cranberries, and cheese, if using.
In a small bowl, whisk together the olive oil, vinegar, maple syrup, mustard, and garlic. Season with salt and pepper, to taste.
