Ingredients

For the dip:

  • 2 cups plain Greek yogurt, or sour cream
  • 1 1/2 cups diced dill pickles
  • 2 tablespoons pickle juice
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried chives
  • Freshly ground black pepper, to taste
  • For garnish: fresh dill, fresh chives, and extra chopped pickles
  • For serving: Potato chips and cut up vegetables

Optional fried dill pickle dip breadcrumbs:

  • 1 tablespoon salted butter
  • 1 clove garlic, minced
  • 1/2 cup panko breadcrumbs

Instructions

  • In a medium bowl, combine the Greek yogurt (or sour cream), pickles, pickle juice, dill, parsley, garlic powder, onion powder, chives, and pepper.
  • If you are making the fried dill pickle dip topping, heat the butter in a small skillet over medium heat. Once the butter is melted, add the garlic and cook for 1 minute. Stir in the panko breadcrumbs and cook until toasted, stirring occasionally, about 3 to 4 minutes. Transfer the breadcrumbs to a plate and let cool to room temperature.
  • If using the breadcrumbs, stir half into the dip and garnish with the remaining breadcrumbs. Garnish with fresh dill, chives, and extra pickles. Serve with potato chips and/or cut up vegetables.
