Ingredients
For the dip:
2cupsplain Greek yogurt,or sour cream
1 1/2cupsdiced dill pickles
2tablespoonspickle juice
1teaspoondried dill
1teaspoondried parsley
1teaspoongarlic powder
1/2teaspoononion powder
1/2teaspoondried chives
Freshly ground black pepper,to taste
For garnish: fresh dill, fresh chives, and extra chopped pickles
For serving: Potato chips and cut up vegetables
Optional fried dill pickle dip breadcrumbs:
1tablespoonsalted butter
1clovegarlic,minced
1/2cuppanko breadcrumbs
Instructions
In a medium bowl, combine the Greek yogurt (or sour cream), pickles, pickle juice, dill, parsley, garlic powder, onion powder, chives, and pepper.
If you are making the fried dill pickle dip topping, heat the butter in a small skillet over medium heat. Once the butter is melted, add the garlic and cook for 1 minute. Stir in the panko breadcrumbs and cook until toasted, stirring occasionally, about 3 to 4 minutes. Transfer the breadcrumbs to a plate and let cool to room temperature.
If using the breadcrumbs, stir half into the dip and garnish with the remaining breadcrumbs. Garnish with fresh dill, chives, and extra pickles. Serve with potato chips and/or cut up vegetables.
