Cilantro Lime Vinaigrette

This easy cilantro lime vinaigrette is great as a salad dressing or sauce for chicken, fish, vegetables, steak, tacos, and more. It is good on just about everything!

Ingredients

  • 2 cups cilantro, packed and stems removed
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1 tablespoon red wine vinegar
  • 1/2 cup olive oil or avocado oil
  • Kosher salt and black pepper, to taste

Instructions

  • In a blender, combine the cilantro, shallot, garlic, lime juice, red wine vinegar, oil, salt, and pepper. Blend until smooth.
  • Serve as a salad dressing or drizzle over fish, chicken, or veggies!

Notes

The dressing will keep in a jar or airtight container in the fridge for up to 1 week.
