Whole Wheat Kefir Pancakes with Blueberry Sauce

Our baby must really like pancakes because I have been craving them lately. We have been making pancakes on a regular basis for breakfast and dinner. They taste good anytime of the day:) Josh always hopes I will ask for our decadent cinnamon streusel pancakes, but I like to save those for special occasions, not every day cravings:)  We recently made Whole Wheat Kefir Pancakes with Blueberry Sauce for breakfast and we all loved them-baby included:)

I recently discovered Green Valley Organics Kefir and I am in love. It is a great source of calcium, protein, and has 10 live & active cultures. It is also gluten free and lactose free. It is made from 100% farm fresh organic milk from local Humane Certified dairy farms. I like to drink kefir for breakfast when I am in a hurry. The Blueberry Pom Acai flavor is amazing! I also like to add plain kefir to my smoothies.

I was curious to see if kefir would work in whole wheat pancakes, so we gave it a try. We substituted the buttermilk for kefir and it worked wonders. The pancakes were fluffy, hearty, and filling. We topped them with blueberry sauce and gobbled them up. These Whole Wheat Kefir Pancakes are delicious and nutritious.

Whole Wheat Kefir Pancakes with Blueberry Sauce

Ingredients
  

  • 1 cup whole wheat flour
  • 1 1/2 tablespoons sugar
  • 1 teaspoon baking powder
  • ยผ teaspoon baking soda
  • ยฝ teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 cup plain kefir plus 2 tablespoons
  • 1 tablespoon canola oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Blueberry Sauce:
  • 2 cups frozen blueberries
  • 2 tablespoons agave nectar or honey
  • 1/4 cup water
  • 2 teaspoons corn starch

Instructions
 

  • 1. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon. Set aside.
  • 2. In a large glass measuring cup or small bowl, whisk together kefir, canola oil, egg , and vanilla extract.
  • 3. Pour wet ingredients over the dry ingredients. Stir gently with a spatula until combined. Don't over mix.
  • 4. Heat a griddle pan or non stick skillet over medium heat. Spray with cooking spray. Pour about ¼ of a cup of pancake batter onto the hot griddle pan, spacing out the pancakes a few inches from each other. When the pancakes start to bubble up, flip and cook until pancakes are lightly browned.
  • 5. To make the blueberry sauce:
  • Cook blueberries, agave or honey, water, and corn starch on medium heat for 10 minutes stirring occasionally. Serve warm over pancakes.

  1. I am having lactose issues myself.. and would love to try an alternative to milk. I have never heard of Kefir, I wonder if i can buy it locally.

  5. I just made these for myself. They’re FANTASTIC. I had them with raspberry jam instead of the blueberry sauce just because I didn’t have any blueberries or agave to use.. Still wonderful! ^.^

  9. Your pancakes look very yummy. But mine didn’t turn out so good. I followed the recipe exactly but the batter turned out very thick so I had to add more kefir. Then the pancakes did not cook through, they were wet in the middle. Maybe, it’s because of the type of flour I used.

But this morning I was out of buttermilk and we don’t drink milk anymore, so I was wondering if Kifer could replace buttermilk in a recipe.   12. This is a super yummy recipe! I used brown sugar in place of regular. And used a little less honey in the sauce. Best pancake recipe yet, and the sauce was so good!

    I make my own kefir, and was looking recipes since my grains are so prolific. This is a great one. I added nutmeg to the pancakes, and thyme to the blueberry sauce. Love it! Thank you!

  19. I’m 8 years too late on this, but just wanted to comment that this is a great recipe! I just made it with pomegranate kefir and was 2 tablespoons short. I also used 2 tablespoons of sugar instead of 1.5 The results were good nonetheless.

    I just started making my own milk kefir, and wanted to try making pancakes with it. These are very light and delicious, something you donโ€™t always get with whole wheat flour. The blueberry sauce is easy and good, too. Iโ€™ll be using this recipe again!

    They were full of flavor. For the kefir, I used our fresh, daily made kefir. I thought it was a little dry and doubled the oil. I added blueberries directly to the batter and put in two scoops of protein powder. It’s one we will do again!

    I got an over abundance of kefir (love it) and was trying to find another way to use it. I found and tried this recipe. Very good pancakes. Will definitely make again. I think I’ll even make up a bunch and freeze them like another review mentioned. Thanks.

  27. for even better probiotics make homemade kefir. it’s extremely easy and only takes mins a day. bottled kefir is not active, made from powdered kefir grains and has way less probiotics. Real kefir keeps fermenting even once in the fridge so would in time get too sour and exploded in stores.
