Weekly Meal Plan {Week 8}

We hope you are enjoying the weekend so far! It is time for another Weekly Meal Plan! Yay! Enjoy!
Week 8:
Monday (3/9): Baked Polenta Pie -similar to lasagna, but instead of noodles, you get a thick layer of creamy polenta as the base. I layered the pie with roasted vegetables, tomato sauce, and of course loads and loads of mozzarella and Parmesan cheese.
Tuesday (3/10): Corn Chowder– we love this comforting chowder. Use frozen corn right now since sweet corn isn’t in season. It’s easy and still good! Serve Greek Yogurt Biscuits with the chowder.
Wednesday (3/11): Spring Vegetable Stir Fry with Lemon Ginger Sauce-I am thinking spring with this simple and healthy stir fry! The lemon ginger sauce is light and refreshing!
Thursday (3/12): Spaghetti with Sun Dried Tomatoes and Spinach-this is one of our go-to pasta dishes. It is perfect for weeknight meals because it is quick, easy, and nutritious.
Friday (3/13): TGIF! Guacamole Grilled Cheese Sandwiches-easy and so yummy! Make Lime Bars for a sweet Friday night treat!
Saturday (3/14): Cornmeal Waffles with Blackberry Compote-the cornmeal adds a slight crunch and sweetness to these delicate waffles. Top with blackberry compote and whipped cream and you are in for a real breakfast treat! Eat leftovers or go out for dinner!
Sunday (3/15): Slow Cooker Vegan Sweet Potato Chili– this healthy chili recipe is vegan, gluten-free, and a family favorite! And the best part? The slow cooker does most of the work! Make our favorite Easy Cornbread to go with the chili and Brown Butter Salted Caramel Snickerdoodles for dessert! Tip-if you have leftover chili, put it in the freezer! It freezes beautifully!

Pasta with sun dried tomatoes and spinach is just BURSTING with summer! Have to try it for dinner this week 🙂
All of these recipes look like meals that I could make for my family. The guacamole grilled cheese and sweet potato chili are definitely recipes that caught my eye. I can’t wait to try these.
Love how doable your meal plans are! Some meal plans are odd with weird ingredients my family won’t eat. Totally making these!
