Weekly Meal Plan {Week 40}

Are you ready for Week 40? It’s a good one! We hope these meal plans are making dinner time easier…and we hope you are trying some new recipes! Enjoy!
Week 40
Monday (10/19): Sweet Potato and Kale Grilled Cheese– My favorite pizza turned into a grilled cheese! Oh, and its cooked in brown butter too! Delicious!
Tuesday (10/20): Three Bean Tacos– A quick and easy weeknight meal that everyone will love! Make a loaf of Pumpkin Cinnamon Swirl Bread to snack on this week!
Wednesday (10/21): Chickpea, Pesto, Tomato, and Mozzarella Salad– Chickpeas are one of my favorite salad ingredients and are a great addition to this one! I like to use my easy homemade Spinach Basil Pesto, but store bought pesto will work too!
Thursday (10/22): Black Bean and Sweet Potato Tostadas– We love making tostadas for dinner and this recipe combines the perfect Fall ingredients on top of a crispy tostada shell.
Friday (10/23): Cheese Ravioli with Lemon Basil Butter Sauce– This recipe is always a hit in our house. It’s fresh, tasty, and an easy meal to have on the table in no time. Make Salted Caramel Skillet Brownies for dessert!
Saturday (10/24): Eggs Benedict-perfect for Saturday brunch! Eat leftovers or go out to dinner!
Sunday (10/25): Rosemary Lemon Oven-Fried Chicken with a Maple Roasted Butternut Squash and Apple Salad and Apple Cake with Cream Cheese Frosting for dessert. The perfect fall meal!
Tip-Make an extra batch of pesto on Wednesday and stick one batch in the freezer to pull out at another time for some pasta, salad or bread!

Another stellar meal plan to get me through the week. I particularly love Saturday. Eat leftovers or go out for dinner. Ha. Go out for dinner. Chipotle, Just this once. My husband is going pheasant hunting that day so I need a shortcut. He does make a marvelous pheasant stew, the only thing he can make on his own!
