Weekly Meal Plan {Week 4}

Happy Saturday! Ready for another week of meal planning? Ready or not, here the meal plan comes!
And remember, we created a Weekly Meal Plan section on our blog so you can get inspiration from all of the weeks!
Monday (2/9): Crispy Black Bean Quinoa Burritos-we love dipping these burritos into Creamy Avocado Yogurt Dip or Restaurant Style Salsa!
Tuesday (2/10): Easy Cheesy Baked Tortellini-we love this easy and cheesy pasta dish. Grab a loaf of crusty bread from the store and enjoy!
Wednesday (2/11): Slow Cooker Butternut Squash Soup with Maple Roasted Chickpeas-let your slow cooker make you dinner tonight! The chickpeas are a tasty topping, but the soup is good all by itself too! Serve with a simple green salad!
Thursday (2/12): Leftovers! You’ve cooked three nights in a row, you deserve a night off! Heat up leftover tortellini or soup for dinner!
Friday (2/13): Sweet Potato Kale Pizza with Rosemary and Red Onion with our favorite Easy Whole Wheat Pizza Dough. Yay for pizza night! We are also making Chocolate Shortbread Heart Cookies for Valentine’s Day! These cookies are super cute and perfect for sharing with your family and friends!
Saturday (2/14): Chocolate Dutch Baby Pancake-Happy Valentine’s Day! Chocolate for breakfast is a must on Valentine’s Day! Serve with fresh strawberries and whipped cream! And hopefully your Valentine is treating you to a special dinner tonight:)
Sunday (2/15): Baked Polenta Pie-ultimate comfort food and perfect for Sunday dinner! Serve a salad on the side and ice cream or frozen yogurt for dessert!

I’m really enjoying these meal plans. I’m finding that I do all the grocery shopping and prep work on Sunday so food is ready to go ~ so I like to know ahead of time for the week what I’ll be making. Plus, I find I waste less food (don’t you hate wasting food!) Food is just too dang expensive to waste. I find that meal plan helps me throw out less, read that the average American throws out $500 a year on food that goes bad before they used it. Bleh.
