Week 26
Monday (7/13): Goat Cheese and Roasted Pepper Crostini with Melon Arugula Salad with Honey Lime Dressing-The perfect simple summer meal!
Tuesday (7/14): Orange Ricotta Chocolate Chip Pancakes-Who’s up for an indulgent breakfast for dinner that includes chocolate? ME! Serve scrambled eggs and melon slices on the side.
Wednesday (7/15): Honey Lemon Rosemary Grilled Chicken-Throw these marinated chicken breasts on the grill and make a simple green salad to go with!
Thursday (7/16): Smashed Chickpea and Avocado Salad Sandwich-A quick and healthy sandwich for dinner, and one of my favorites too! Make No-Bake Dark Chocolate Almond Cookies for dessert! You don’t have to turn on your oven to make these delicious cookies!
Friday (7/17): Blueberry Corn Salad-Enjoy your fruit and veggies for dinner all in one bowl. Serve with Pesto Cheese Bread and a cool glass of Strawberry Limeade!
Saturday (7/18): Raspberry Coconut Granola Pancakes– Serve up these delightful summery pancakes for breakfast and eat leftovers or get takeout for dinner!
Sunday (7/19): Sausage and Pepper Skewers– Josh loves his skewers with sausage and I’ll be enjoying mine sans meat with a side of Zucchini Corn and Avocado Salsa and a bowl of salty chips! It’s National Ice Cream Day and we will be celebrating with Twix Ice Cream Pie for dessert!

Can you give a direct link to the Goat Cheese and Roasted Pepper Crostini? The link in your blog post just goes to the cafezupas.com homepage and I can’t find the recipe. Or is it as simple as it looks? I’m squinting at the picture and trying to figure out if you’ve got a bit of balsamic hiding in there…looks delicious either way!
