Weekly Meal Plan

We are so glad that you are excited about our Weekly Meal Plan series! Week 1 was a huge success! We are back with another week of dinner ideas! We hope you find them helpful! And remember, they are just a guide, feel free to switch up the days or only make a few recipes during the week. And you can always go back and look at previous weeks. We created a Weekly Meal Plan section on our blog so you can get inspiration from all of the weeks!

Monday (1/26): Slow Cooker Vegan Sweet Potato Chili-it’s Monday so let your slow cooker make you dinner. Start the chili in the morning and it will be ready when dinner time rolls around. We love this easy and healthy dinner! And if you have leftover chili, stick some in the freezer! This chili freezes beautifully!

Tuesday (1/27): Lemon Poppy Seed Yogurt Pancakes-we love breakfast for dinner nights! Serve the pancakes with orange slices or grapefruit! Yay for citrus season!

Wednesday (1/28): Buttermilk Oven Fried Chicken-Josh and Caleb love this healthier oven baked chicken. Josh is in charge of the chicken and I will make our easy Arugula Pasta Salad to go with! Meat lovers and veggie lovers will be happy with this dinner!

Thursday (1/29): Roasted Cauliflower and Chickpea Tacos-my all-time favorite tacos! Hurry up Thursday! I can’t wait to devour these!

Friday (1/30): Avocado Pita Pizza with Cilantro Sauce-an easy pizza for Friday night! After the boys go to bed, we are going to watch a movie and enjoy Salted Caramel Chocolate Chip Cookies. Don’t tell Caleb:)

Saturday (1/31): Brown Butter Maple Granola-I love making a big batch of granola on Saturday morning. We enjoy some freshly baked granola with Greek yogurt and fruit and then I put the rest away for the week! Have leftovers or go out for dinner!

Sunday (2/1): It’s Super Bowl Sunday and that means snacks/appetizers count as dinner at our house! Here are a few of our favorite game day snacks: Homemade Soft Pretzel Bites, Mexican Layer Dip, Loaded Sweet Potato Nachos, Sweet and Salty Marshmallow Popcorn, and Chocolate Chip Cookie Bars. Don’t worry, we will have a veggie tray and some fruit too:) Make one or make them all! Enjoy the game!
