Spinach Mushroom Breakfast Casserole-this easy vegetarian egg casserole with spinach, mushrooms, and goat cheese is the perfect breakfast or brunch and always a crowd pleaser!

you'll need:

• Olive Oil • Cremini Mushrooms • Spinach Leaves • Garlic • Kosher Salt and Black Pepper • Onions • Goat Cheese • Eggs • Milk

Cook sliced mushrooms in olive oil. Stir in spinach and garlic. Cook. Season with salt and black pepper.

Pour mixture on a prepared baking pan. Sprinkle sliced green onions. Crumble goat cheese over the vegetables.

Whisk together eggs and milk. Season with salt and black pepper. Pour egg mixture over the veggies and cheese. Crumble goat cheese over the eggs.
