Start by cooking the quinoa and set it aside. Sauté the onion, garlic, and jalapeño in olive oil, followed by the peppers and corn. Add the lime juice, cumin, chili powder, and cilantro. Stir and season.

Add the cooked quinoa and black beans to a bowl. Add the sautéed vegetable mixture and stir. Pour in the enchilada sauce and stir. Add some cheese.

Pour the mixture into a prepared dish. Top with remaining cheese. Bake and let cool.
