Watermelon is probably my favorite thing about summer. I eat it every day without fail. I think I have an obsession. I love eating it plain, in slices, cut up in cubes, or in a salad.

This Watermelon Feta Salad is my favorite because it is so fresh and so easy to make. The flavor combination might sound odd at first, but trust me, it is a WINNER! It is the perfect salad for a hot summer day and a fun way to jazz up everyone’s favorite summer fruit.

4-Ingredient Salad

You only need four ingredients to make this refreshing salad!

  • Watermelon
  • Red onion
  • Feta cheese
  • Mint

You can also add a drizzle of balsamic vinegar or balsamic glaze, but that is optional. The salad is good with or without it!

How to Make Watermelon Feta Salad

I like to start with a chilled watermelon. If your watermelon isn’t cold to start with, you can always chill the salad before serving. Cold watermelon is the best on a hot summer day!

Cut the watermelon into bite sized cubes with a sharp knife.

In a large bowl, combine the watermelon, red onion slices, crumbled feta cheese, and fresh mint. If you are going to add balsamic vinegar or balsamic glaze, add right before serving.

Perfect Summer Side Dish

You can serve this light and refreshing watermelon salad alongside any summer meal. It is the perfect side dish to bring to a summer potluck, party, or BBQ. The sweet and salty combo will WOW your friends and family and that pop of mint makes the salad extra special.

I forgot the top about adding non-chopped mint just before serving, and I agree that it would make for a better appearance. I received many compliments from guests at the graduation party that I took it to!

Insanely delicious & so, so simple. I opted not to use any vinegar. Donโ€™t skimp on the mint & slice your onions paper thin. Will make this all summer long. Thank you, Maria!
