Toffee Crunch Cookies

I am always looking for new cookies to try, especially cookies that involve toffee. I have a special place in my heart for toffee cookies. They are the best! So when I saw Aimee’s recipe on Tasty Kitchen for Toffee Crunch Cookies, I knew I had to make them. I got out all of the ingredients to make the cookies and realized there was actually no toffee in the recipe. I was confused. The cookie recipe sounded delicious, toffee or no toffee, so I proceeded and I am so glad I did.

These cookies are loaded with oats, crisp rice cereal, chocolate chips and marshmallows. After baking the cookies, I discovered why they are called Toffee Crunch Cookies. The marshmallows melt in with the oats and crisp rice cereal creating a toffee texture and flavor. Genius! These cookies are amazing! Josh came home and ate a cookie and even said, “I love the toffee in these cookies.” Ha! I fooled him:)

    1. I used unsalted. The original recipe didn’t call for any salt, but I threw in 1/4 teaspoon because I like salt in my cookies!

  10. Have you tried the new Trader Joe’s dark chocolate toffee bar? It’s incredible and as soon as I can get my hands on more bars, I’m going to make toffee cookies with them!

    1. The cookies are chewy thanks to the marshmallows and oats! There is a slight crunch from the crisp rice cereal too! A little bit of everything:)

  19. I’ve made cookies with rice krispies in them before, and I love them! Toffee is one of my favorites – I need to try this out!

  20. Baked these cookies yesterday for my family and I took them to work to share. The cookies were a hit! Next time I am going to substitute butterscotch chips for the choc chips. I think the butterscotch would be a nice touch with the melted marshmallows, oatmeal and rice krispies. My family enjoys many of your recipes. Our very favorite is the ricotta lemon pound cake, DELICIOUS!
