Spinach Salad with Fruit, Almonds, and Feta Cheese

Josh is out of town this week, he went on a hiking trip with the guys. I miss him like mad, but I am enjoying the silence. We put the kitchen remodel on hold for a week. I wasn’t about to work all by myself while Josh is on vacation…ha! Last night I made a spinach salad with fruit, almonds, and feta cheese for dinner and enjoyed the peace and quiet.

Our dining room may be in the living room right now, but I was still able to relax and enjoy my meal. I love adding fruit to salads. This time I used blueberries, strawberries, raspberries, and mangoes. I also topped my spinach salad with almonds, feta cheese, and a little raspberry vinaigrette. I had a beautiful, healthy meal in no time. Simplicity at it’s best.

Dine alone or enjoy this simple summer salad with family and friends. It is delicious either way.

Spinach Salad with Fruit, Almonds, and Feta Cheese

Ingredients
  

  • Fresh spinach
  • Fruit-blueberries strawberries, raspberries, and mangoes
  • Sliced almonds
  • Feta Cheese
  • Raspberry Vinaigrette

Instructions
 

  • In a bowl or on a plate add the fresh spinach. Top spinach with fruit, sliced almonds, and feta cheese. Drizzle with raspberry vinaigrette dressing.
