Pin ItWe are at my dad’s house in Illinois this week. I am ready for some R&R in the pool and my dad’s cinnamon rolls๐ The perfect vacation! Don’t worry, just because we are on vacation doesn’t mean we won’t be sharing tasty recipes. We planned ahead to make sure you are well taken care of. Plus, I couldn’t wait to share this Southwestern Grilled Sweet Potato Salad. I want to eat it every single day of my life.
Sweet potatoes are in my top 5 favorite foods of all time. Watermelon, gnocchi, avocados, and cookies are also on that list. My list may change from time to time, but sweet potatoes (and cookies) never leave the list. Sweet potatoes always hit the spot!
We have been giving our grill a killer workout this summer. Grilling is easy, doesn’t heat up the house, and I love the flavor. For this salad, I cut the sweet potatoes into slices and tossed them on the grill. Ok, I really didn’t toss them, but they would make good little frisbees:)
I also charred an ear of corn on the grill. When the sweet potatoes and corn cooled, I cut the sweet potatoes into cubes and removed the corn kernels from the cob. I put them in a bowl and added black beans, avocado, red pepper, green onion, cilantro, and lime.
My mouth is watering just thinking about this salad! I love all of the flavors. We ate this Southwestern Grilled Sweet Potato Salad for dinner with wedges of watermelon on the side. It was the perfect summer meal. And just so you know, this salad is good cold too. I ate the leftovers straight from the fridge the next day and loved it just as much!
I might have to take a break from the pool this week to make this Southwestern Grilled Sweet Potato Salad. It needs to be in my belly!
Southwestern Grilled Sweet Potato Salad
Ingredients
- 4 medium sweet potatoes, peeled and cut into ¾ inch slices
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 ear sweet corn, husked
- 15 ounces black beans, rinsed and drained
- 1 red pepper, diced
- 2 green onions, chopped
- 1/2 cup chopped cilantro
- 2 avocados, pit and skin removed, chopped
- Juice of 2 limes
- Salt and pepper, to taste
Instructions
- In a large bowl, toss the sweet potato slices with olive oil. Season with salt and pepper. Place the sweet potatoes on a grill over medium heat. Cook until tender, about 8-10 minutes on each side. When the sweet potatoes are close to being done, place the ear of corn on the grill and cook for 3-4 minutes, rotating so the kernels get slightly charred. Let the sweet potatoes and corn cool to room temperature.
- Cut the sweet potatoes into cubes and place in a large bowl. With a sharp knife, remove the corn kernels from the cob. Add the corn to the bowl. Stir in black beans, red pepper, green onions, cilantro, and avocado. Squeeze the lime juice over the salad and stir until combined. Season with salt and pepper, to taste. Serve.

I love grilled sweet potatoes! I have never thought to make a salad out of them though. I would gobble this up in seconds! It’s gorgeous – so colorful! I’d skip the main course and eat a huge plate of this instead. It’s right up my alley ๐

Not sure about this. I never eat white potatoes but get on a kick and will bake lots of sweet potatoes. Not a fan of cilantro. Might try it without that.

Southern grilled sweet potatoes (well anything grilled really) sound great. Sweet potatoes are so much better than their white counter part and so much healthier too thanks for planning ahead and have a dip in the pool or two for me.

I want to make this salad. It looks so good. However, I HATE peeling sweet potatoes. Do you have a trick or do it differently than me? They are so much harder to peel than white potatoes and I grow so tired of it so quickly Please share any tips!
I just peel them with a peeler. I wish I had a cool trick:)

I made this today — so so pretty! The only changes I made were: swap the cilantro for parsley because my mom doesn’t like the former and I added two tablespoons of olive oil to the dressing for a bit of creaminess. A beautiful salad and I’ll make it again.

I was making seafood chiles rellenos for supper and was looking for a new side dish…when I came upon this recipe. The colors caught my eye first of all and then the ingredients listed sweet potatoes and black beans and corn.
What could be more Mexican than that? I resisted the urge to add some Mexican spices to the salad and was glad I did. The flavors of this salad are outstanding as listed and no other spices are needed. Plus, then the Mexican flavors of the chiles rellenos could shine all by themselves.
This was the PERFECT accompaniment for my chiles rellenos…soooo good!!!
The only thing I did differently is use a honey lime dressing instead of just lime juice to pour over the salad.

Mine was a bit different since I didn’t have any tomatoes and black beans on hand. Also, had to use up some hot dogs so threw those in too. Instead an outside grill, cooked everything using a cast iron skillet. excellent recipe!

I made this for a 4th of July picnic. When I told people ahead of time what I was making they all turned their noses up. However, they all loved the final dish and, sadly, I had NO leftovers! Great recipe.

It can be served warm or cold. I think it is good both ways!
I am just wondering if this salad would be OK without some olive oil. It only calls for lime juice. Any thoughts? I love the ingredients!
I toss the sweet potatoes in olive oil before grilling them and add lime at the end for a kick of flavor!

I love roasting sweet potatoes and hadn’t thought of grilling them (I don’t know why, I love grilling corn all summer long). I was surprised how well they worked with the savory lime and cilantro flavors. Delicious! A new summer go-to in my house. Can’t wait to have the leftovers at lunch today!
This is a delicious salad! All the different flavors come together for a perfect summer salad. As tasty as it is the day it’s made, it’s even better the next day – if there are any leftovers. I don’t feel guilty having leftovers. Such a healthy choice! I’ve been making it for 2 or 3 years now – always a crowd pleaser.
