You’ll find the full list of ingredients in the recipe card below, but here are some ingredient notes before you get started.

  • Almond Butter: Nut butter adds creaminess and richness, along with a dose of healthy fats and protein. Make sure you use a creamy almond butter that is drippy and not dry. Always stir really well before using. Cashew butter will also work.
  • Rolled Oats: The oats get blended in the food processor, creating a hearty oat flour. If you need the balls to be gluten-free, use gluten free oats.
  • Protein Powder: Use your favorite vanilla protein powder. I use Clean Simple Eats vanilla (use the code TWOPEAS for a discount).
  • Coconut: Toast the coconut in the oven for extra flavor. You can use unsweetened or sweetened coconut flakes.
  • Dates: Use Medjool dates. If they have a pit remove before using. If your dates aren’t super soft, you can soak them in hot water for 10 to 15 minutes before using. The dates give the balls the chewy caramel flavor!
  • Chia Seeds: Chia seeds add protein and fiber. Keep them in the freezer to prevent them from going rancid.

  • Toast the coconut. Toasting the coconut brings out the best flavor and it only takes a few minutes in the oven. Don’t walk away, it browns quickly and you don’t want it to burn.

  • Combine ingredients in food processor. Add the almond butter, maple syrup, dates, vanilla extract, oats, protein powder, and salt to the bowl of a food processor.

  • Mix. Turn on the food processor and mix until well combined.

  • Stir in remaining ingredients. Transfer mixture to a small bowl and stir in ¼ cup of the toasted coconut, chia seeds, and mini chocolate chips.

  • Form into balls. Form the mixture into balls, about 1 tablespoon per ball. You can use a cookie scoop or roll with your hands.
  • Melt the chocolate and dip the balls. Place chocolate chips and coconut oil a microwave safe bowl and melt until smooth. Dip the bottoms of energy balls into the chocolate and place on a baking sheet that has been lined with parchment paper.

  • Drizzle and sprinkle. Use a spoon to drizzle the ball with chocolate and immediately sprinkle with remaining toasted coconut and a little flaky sea salt.
  • Chill. Place the balls in the refrigerator so the chocolate can set up, this will take about an hour.

How to Store

Once your protein balls are made, it’s important to store them properly to keep them fresh and maintain their texture:

  • In the Refrigerator: Store the protein balls in an airtight container in the refrigerator for up to 2 weeks. They will stay fresh and firm in the fridge.
  • In the Freezer: For longer storage, you can freeze these protein balls. Place them in a freezer-safe bag or container with parchment paper between layers to prevent sticking. They can last up to 3 months in the freezer. Let them thaw a little before enjoying.

  • Preheat oven to 350 degrees F. Place the coconut on a baking sheet that has been lined with parchment paper. Spread out in an even layer. Bake for 5 minutes, stirring once, or until coconut is lightly toasted. Remove from the oven and let cool.
  • In a food processor, combine the almond butter, maple syrup, dates, vanilla extract, oats, protein powder, and salt. Process until well combined.
  • Transfer mixture to a small bowl. Stir in ¼ cup of the toasted coconut, chia seeds, and mini chocolate chips. Form the mixture into balls, about 1 tablespoon per ball.
  • Add the chocolate chips and coconut oil to a small microwave safe bowl. Place in the microwave and heat in 30 second intervals until smooth.
  • Line a baking sheet or tray with parchment paper.
  • Dip the bottoms of energy balls into the chocolate and place on the prepared baking sheet. Drizzle the tops with chocolate and immediately sprinkle with remaining toasted coconut and flaky sea salt.
  • Place the balls in the refrigerator for about 1 hour, or until the chocolate hardens. Enjoy!
