Roasted Red Pepper and White Bean Dip
Updated March 26, 2019
I’ve always been a sports fan. My dad and brother taught me at a young age to love sports. I played basketball in Jr. High, but chose to be a cheerleader in high school-no laughs please. I had fun cheering and I got the best seats for free. Sometimes I got in trouble for yelling at the refs instead of the cheers, but it was all in good fun:)
I am excited for the Super Bowl on Sunday. My team (the Bears) were out of the running from the beginning, but oh well, I will still have fun watching the game. We are having some friends over which means extra mouths to feed. Yahoo! I haven’t finalized the menu yet, but I am getting closer. I guess I better hurry and decide, huh?
I think this roasted red pepper and white bean dip will make an appearance. It is easy, tasty, and healthy. I know Super Bowl parties are meant for indulging, but I always like to have healthy options available. I made this dip in the food processor and it took about five minutes. This is a no fuss dip!
The white beans make the dip nice and creamy. The roasted red peppers, lemon, rosemary, and red pepper flakes add tons of flavor. I serve the dip with pita chips, vegetables, or baguette slices. It is also good as a spread on a veggie sandwich.
If you want to offer a healthy snack on Sunday, try my roasted red pepper dip. Your guests will devour it, whether they are trying to eat healthy or not.
Here are a few other tasty snacks to serve:
Black Bean Salsa-this salsa is hearty and healthy. Serve with baked chips.
Cilantro Lime Hummus-I love cilantro and lime together, this hummus is great with pita chips or baked tortilla chips.
Guacamole Dip-homemade guacamole is a must for game day!
Josh’s Mango Salsa-Josh is known for his mango salsa-it is the best!
Baked Potato and Sweet Potato Chips-make your own baked chips. The sweet potato chips are my favorite!
Gaby from What’s Gaby Cooking made an amazing spinach dip with pita. Make sure you add this to your party list too. I know I am going to make it!
Roasted Red Pepper and White Bean Dip

- 1 T chopped fresh rosemary basil would be good too
- Dash of crushed red pepper

Instructions
- In a food processor, chop up the garlic. Add the beans and roasted red peppers until smooth. Add the lemon juice and fresh rosemary. Puree. Remove the dip from the food processor. Put in a bowl. Roasted red peppers are one of my favourite ingredients, a tasty anchor for a dip. The white beans are a healthy addition as well.
That is one gorgeous dip!
Cheers,
Rosa
What a great and easy dip! I love that its bean based too (hooray for extra protein!). I’m still finalizing my menu as well! We’re only have a few people over so I’m trying to avoid making TOO much food (which I’m often guilty of). Did you end up trying step? How did it go?
I love dips. Especially when they are so easy. Great for sharing.
This looks so good, served with whole grain chips or pitas! I love the touch of rosemary!
Your dip looks fantastic, so colorful.
Love bean dip & I bet the red pepper adds great flavor
Roasted red peppers are one of the only veggies I like! This sounds sooo good. ๐
This is a perfect dip I could eat as is! Beautiful. ๐
Gorgeous dip! I love making white bean dips as well because you feel so much more virtuous than when they’re laden with mayo and sour cream. Have fun watching the game this weekend!
Great dip idea. Yes, very healthy too! I use hummus daily to eat with my lean proteins and veggies, now I have another alternative with this dip. Wish u guys were closer, I would love to hang with you, but I would probably talk your ear off during the game! Love your cheerleader story. I was one too, didn’t last long though.
Maria, This sounds wonderful- and healthy as well! I will be using this on Sunday!! My family will gobble this up. Thank you for this post!
Not a football fan but that wouldn’t stop me eating this. Looks delicious! That colour is brilliant. And it even sounds like I could eat it whilst doing 10 in 10. What more could I want? Have got jar of red peppers downstairs….
Is this the dip we had at Becky’s? If so… I can attest to it’s yum-factor!!! It’s delicious!
I love roasted red peppers and can only imagine how delicious that dip is. What a bonus that it’s healthy too!!!
Oh two of my favorite things : white cannelloni beans and roasted red peppers! This looks so delicious!
Yay! Great idea for the jar of roasted red peppers I have in the fridge. I had been wondering what to do with them ๐
you know I eat a ton of red peppers w/ my hummus sammie. I need to make them into a dip, right? I mean everyone else has, not me.
The Roasted Red Pepper and White Bean Dip just got added to my list for Friday’s Girls Night!!
I love the idea of combining white beans and red pepper, i usually see the two as separate dips. While i’m no sports fan this dip would be great for a party… maybe i should throw a party =)
I love this–and it’s got two of my all time faves, too–roasted peppers and white beans. totally making this for Sunday, thank you for sharing!
Looks delicious, Maria! A perfect, easy dip for Superbowl Sunday. I’m the same as you – I love my sports and am quite happy to watch a football game or two on a Sunday afternoon.
This looks gorgeous. The color is beautiful!!!
I have another dip I want to try too – one with spinach, white beans and balsamic. Creamy yet healthy like this one!
YUM! I love the looks of this!
this looks downright delish! I have all the ingredients right now and have to make it for Sunday!
I love both a good roasted red pepper dip and a white bean dip but I have never had them together so this sounds like the perfect snack for me. Have fun watching the game!
This dip looks almost too good to eat. Almost.

I am loving the bright color of the dip – it looks and sounds terrific.
Looks and sounds fabulous!
oh goodness, this post may require you to pull an old cheerleading photo from your dad! c’mon papa! come through for us!
the dip looks great too.
To be honest, I never watch the superbowl, but we I just go to the parties for the food! This looks like it would be a great addition.
I always have such a hard time deciding what to make for guests. I usually want to make everything (and nothing) simultaneously.
This dip looks great! I am not a superbowl fan at ALL but I would sit through it if it meant I could have a bowl of this all to myself.
What a great, easy to make dip! I’ve always been a sports fan too but had a brief stint as a cheerleader too.
this is a quality appetizer, maria–pretty, healthy, and delicious.
a fan of da bears, eh? good for you. ๐
This looks SO GOOD but I would probably eat a pound of bread with it to boot ๐
I love this combination! I would also love this as a spread on a sandwich! Great dip idea!
So as a homeschooling mom of 4, I shouldn’t be running off to the store–in the middle of the day–to buy ingredients for one dish. But I did! And it’s absolutely delicious! I love dips and I now I can eat it to my heart’s content. ๐ Thanks for sharing!
The dip looks really good! Roasted red peppers are one of my weaknesses!
Who Dat!
Wow. This looks delicious! Now, tell me how to get my husband into the kitchen?
I love the color. I made something similar and had toasted ravioli with it. YUM. Have a great superbowl party!
okay this looks good. I love super bowl food!
…and i have all these ingredients (minus the herbs) but heck, maybe I’ll head to sunflower farmers market tomorrow!
I don’t need a sport event as an excuse to eat a good dip! I love them and have been introducing them to my children so that they get exposed to something else than salsa. Guacamole is their favorite so far… Thanks for the recipe! Enjoy the game!
Your dip looks amazing! I have been on a bean dip kick lately… Soo good!
Talk about the perfect Super Bowl snack – looks great!
Love this dip. Used it instead of pizza sauce on little tortilla pizzas with goat cheese, artichoke hearts, and procciuto.
Fantastic! I used it as a sauce for my pan fried chicken breast. It worked really well. I’m on an aleppo peppers kick so I added that. This will be a go to at our house from now on.
