Maria’s Helpful Tips
- Carrots: For the best results, use fresh, firm, small to medium-sized carrots. If you can find carrots with their greens still attached, grab those—they’re often sweeter and more vibrant in flavor.
- Cut Uniformly: If the carrots are too big, you can cut them in half lengthwise, make sure they are all about the same size. This helps them roast evenly.
- Roast at High Heat: For the perfect caramelization, roast the carrots at 425°F to get a golden, crispy exterior. Time will vary depending on the size of your carrots, so check early.
- Feta: Opt for high-quality block feta rather than crumbled feta for the smoothest whipped texture.
- Drizzle with Honey: For a sweet contrast, drizzle with a little honey or hot honey after roasting. The sweetness pairs wonderfully with the whipped feta!
