Recipe for Cherry Oatmeal Crisp

We picked up a big bag of Rainier cherries at the farmer’s market on Saturday. They are sweet and juicy. I have been mixing them into my Greek yogurt this week. I also made individual cherry crisps for dessert.
I love making mini or individual desserts. Everyone feels special because they get their own and it is great portion control. I used our little white ramekin dishes. I pitted the cherries and made an easy oat topping-old fashioned oats, flour, cinnamon, brown sugar, a pinch of salt, and butter. The little crisps bubbled up in no time. I served them with a dallop of vanilla frozen yogurt.
We ate our cherry crisps outside on our patio. Summer, I love you!
Oh and I pitted the cherries by hand-the old school way. I really need to invest in a cherry pitter. Does anyone have one? Do they work well?
Makes 3 individual crisps-we used small ramekins. You can double or triple it for one large crisp or more individual ones.
About 1 ½ cups Rainer cherries, pitted and halved
2 T sugar
1 T flour
¾ cup old fashioned oats
½ tsp. cinnamon
Pinch of salt
2 T. flour
½ cup brown sugar
2 T. cold butter-cut in small pieces
1. Preheat the oven to 350 degrees. Spray ramekins with cooking spray.
2. In a small bowl sprinkle the cherries with the 2 T of sugar and flour. Mix well. Let sit while you make the oat topping.
3. In a small bowl add the oats, cinnamon, salt, flour, and brown sugar. Stir.
4. Add the butter to the oat mix. Mix with your hands until you have a crumbly mixture.
5. Pour sugared cherries into the sprayed ramekins. Make sure each one is even. Add the oat topping.
6. Place ramekins on a baking sheet and bake for 20-30 minutes. Until they are bubbling.
7. Cool for a minute and serve. We added a dallop of vanilla frozen yogurt:)

I still remember the taste of Rainer cherry when I worked as a cherry picker 3 years ago in BC.
A cherry pitter was such a good investment as far as I'm concerned. I pitted 8 cups of cherries for jam last week & it made much quicker work of it.
This is the first year I've made cherry crisp & now I'm seeing them everywhere, so good

They do work well, my family canned them when we were growing up.. all kinds, vans, royal annes, bing & pie…. I can find out for you what my mom has, because she just used it last week!..

oxo handheld cherry pitter is the best! we have a ranier cherry orchard here in calif (2000 trees). we've already harvested in may so next year i will have to try your crisp it looks yummy!
i love crisps. i love cherries. the trouble with your individual portions is that it probably wouldn't be enough to sustain me and all my love for crisps and cherries. they look just lovely, and good for you for doing it all by hand. 🙂

I love how you make just enough. I need to learn to do that. When I was growing up my mother always said, if your gonna heat up the oven, you might as well double the recipe. It's hard to get her voice out of my head and I'm only cooking for 3. (sigh)

Cherry pitters cost 10-20 bucks and are SO WORTH IT. I picked up 7 or so pounds of bing cherries for canning a few weeks ago… we spent 10 minutes and canned about 10 cherries and then decided to walk to the grocery store for a cherry pitter. Definitely worth it.
I've never made a cherry crisp! That looks so good! I've also never tried Ranier Cherries. I always see them. Maybe I'll pick some up tonight!

I have a cherry pitter (OXO brand), I think it's definitely worth it when you're working with large quantities of cherries.
I just bought a big bag of Bing cherries that I need to use up. Maybe I'll do that tomorrow. Why did I buy a big bag? Because I just bought a cherry pitter from The Prepared Pantry (dot com). They've got great stuff there. They had free shipping (probably don't now), but I'm really liking the pitter. They seem hard to find in stores, but Amazon and everywhere else online has them.

Your crisp looks great. I have a cherry pitter (little hand held thing that shoots the pit across the room). I highly recommend one. We have two and my sons shoot the pits at each other. It's a royal mess, but easier than me hand cutting up cherries!! 🙂

Cherry crisp sounds really delicious! About the cherry pitter, I don't why I don't have one. Maybe because I don't really bother to pit the them. I just use them whole with the pit.

There is something special about having your own portion of dessert, much like a cupcake. These little beauties of dessert sound divine.

I love rainier cherries, they're so pretty too. I heard you can pit cherries with a chopstick by pushing the pit through, but I've never done it before.
