Pin ItYou can’t beat a fresh, juicy pineapple. Well, maybe if you were eating that fresh, juicy pineapple in Hawaii. The pineapple in Hawaii is by far the best. Since I can’t go to Hawaii right now, I will just enjoy all of the Pineapple Salsa.
This simple pineapple salsa only takes a few minutes to make and is the perfect salsa for spring and summertime. This tropical salsa is sweet, colorful, and refreshing.
This salsa only takes about 10 minutes to make and can be served with chips, tacos, grilled meats, shrimp, salads, and more! You are going to LOVE it!

Salsa Ingredients
- Pineapple- the star of the salsa. Make sure you pick a ripe, juicy pineapple.
- Red pepper- it pairs well with the sweet pineapple.
- Cilantro- a must for salsa!
- Red onion- for color and flavor!
- Jalapeño pepper- to give the salsa a little kick.
- Garlic- I love adding a little garlic to this recipe.
- Lime juice- fresh lime juice brightens up the salsa!
How to Cut Pineapple
- First, make sure you have a sharp knife and a stable cutting board.
- Lay the pineapple on it’s side (on the cutting board) and slice off the crown (the green part) and the bottom of the pineapple, about ½-inch from the bottom of the fruit.
- Stand the pineapple up on the bottom side and carefully trim the thick skin, starting from the top to the bottom. Cut carefully so you only remove the skin and not the fruit.
- Remove the brown spots (eyes) left in the pineapple flesh with a small pairing knife.
- Cut the pineapple in half through the center and cut the pineapple into 4 pieces lengthwise.
- Cut the thick, tough core from the center of each wedge.
- Cut the pineapple into desired size pieces. For this salsa, you will want to dice the pineapple so the pieces are super small.
How to Make Pineapple Salsa
In a medium bowl, combine pineapple, red pepper, cilantro, red onion, jalapeño, garlic, and lime juice. Stir until well combined. Season with salt, to taste. Serve at room temperature or chilled.
What To Serve With Pineapple Salsa
This pineapple salsa is the perfect recipe for summertime because it is SO easy. If you need an easy recipe to take to a summer BBQ, picnic, or potluck, you should make this salsa. It is always a crowd pleaser. You can serve the salsa with:
- tortilla chips (my favorite)
- fish
- pork
- chicken
- tacos
- shrimp bowls
- burritos
- nachos
- quesadillas
Fresh is Best
For best results, use fresh pineapple for this salsa recipe. If you are in a pinch you can use canned pineapple, but fresh really is best. You will love the mix of sweet and spicy in this salsa. The flavors are SO good and the colors are so vibrant. It is a pretty salsa to serve and a delicious salsa to eat!
How to Store
Place the salsa in a container and keep in the refrigerator for up to 3 days. Stir before serving. I don’t recommend freezing this salsa.

That is so strange about your allergy to pineapple. I used to get a rash all over my chest when I ate raw pineapple, but now I can eat it without any reaction. My son used to throw up when he ate pineapple, even canned, but now he can eat it without any reaction. There’s something special about pineapples. Yeah! They are delicious!
The Salsa looks yummy, and I have a lot of cilantro in my garden right now. I’ll have to try it.

The same thing happened to my mom–ate pineapple her whole life, then one day, she took a bite had this horrible reaction! She avoided it for a year or so, and now she can eat it again. Strange, huh?

Fruit salsas are among my favorites, pineapple topping that list! It looks amazing, all the colors & flavors, YUM!! Glad your pineapple allergy seems to have fixed itself, I tend to get the same reaction from too much citrus fruit and pineapple as well. 🙁
This looks insanely good! I did a blog post last winter for a roasted pineapple salsa which was really good but this one looks so summery. They sell something like this at Whole Foods and it is amazing but so….expensive. Can’t wait to try this one, it sounds like it would also be so good on grilled meats- Thanks, Chris

I had a sudden severe allergic reaction to crabmeat several years ago, and tested positive allergic to shellfish. I have not eaten crab, shrimp or lobster ever since because I am so scared! You are very brave to sneak a piece of pineapple to see what happened! I’m glad your allergy is gone! The salsa looks incredible, and I’m glad you could enjoy it! 🙂
Some pineapples do the same thing to me! Not all, just some! It makes me wonder if I am reacting not to the pineapple but to whatever chemicals they used on it? I don’t know.

The same thing happened to me with fresh pineapple. For years I didn’t dare eat it, and when I did my mouth felt funny. Then a few years ago I could suddenly eat it again (so it can’t be pregnancy that cured it for me, lol!) This looks so good; pineapple is one of my favorite fruits now.

Pineapple is one of my favorite things in salsa. I do one with pineapple, mango, chili garlic sauce, cilantro, lime and use it for fish…I may or may not grate a little onion in it or add chive. Depends on what I have

Actually this happened to my sister-in-law. It has something to do with you and your baby’s hormones and stuff (not a technical term). My sister-in-law is able to eat cinnamon now even after having her bundle of joy a few years ago.

Pregnancy does amazing things that way. I hated pineapple until I was pregnant with my 3rd and then I couldn’t get enough of it! Now I love pineapple and this salsa is going on my “to make” list!

this looks so tasty! I too get weird sensations sometimes when I eat pineapple. Did you know this can be linked to a latex allergy/irritation? True story. I found that out the hard way when I got braces and they gave me latex bands. Yowsers! 🙁

Yay for cured allergies! I developed quite a few in my early-mid 20’s, and then 5 years later, poof! They were gone! I’m so happy I can eat whatever I want now 🙂 I hope you have the same freedom with pineapple, the salsa looks great!
I’ve had that happen with pineapple before. I wonder if different varieties have different affects, or if it’s pesticide residue or something. I cannot eat kiwis anymore and I’m soooo sad. Hopefully you’re safe now from allergic reactions. 🙂 The salsa looks so refreshing. I’m craving fresh stuff like this right now.

Wow! Glad you didn’t react to the pineapple. As an RN, though, I would not advise to test yourself anymore with foods you’ve been reactive with…especially while pregnant!! Hoping you carry an epi-pen with you, just in case. This might be something you’ll want to run by your OB, since you’ve been allergic to it before. We don’t want anything to happen to that darling 3rd pea in the pod!! Love you site, love your amazing recipes! :))

allergies in generally have me completely frustrated right now. Although my little guy ha been tested for some things… every time I introduce a new food to him, he breaks out. No answers gah! but Pineapple is on my list of foods I’m allergic to, as well as strawberries, apples, some nut, carrots…but the weird thing is that the reaction is only sometimes, which makes me think it has more to do with how the food is processed v. the actual food itself. I HATE ALLERGIES!

LOVE IT! Made it for an island themed party I hosted, and served some for an Easter appetizer the next day. Both days they ate it all! It’s so refreshing and delicious! This recipe is definitely a keeper!(I did use yellow instead of red onion though because that is what I had on hand.)

I had the same reaction but its more of a nuisance when I eat it vs a danger. I am, however, highly allergic to mangoes. They are part of the sumac family and it gives me the same reaction as poison sumac would. Rash and face swelling. No fun. 🙁

The core of a fresh pineapple is very acidic. If you eat a fresh one that has not been properly cut, the enzymes in the pineapple (especially the core), combined with the high acidity of the fruit, will begin to break down the tissue in your mouth. This can lead to mild irritation in the form of swelling, a “raw” feeling, and a tingling sensation.
Hormones can do crazy things, my niece developed an allergy to cats after her first child and had to find new home for her three lovely felines. I love fresh pineapple. This looks delicious.

Try fresh pineapple in chillie salt and vinegar. You can also add green mangoes to the salad.let it dry for ten mins in the sun et voila..you get a tropical delightful salad

If you are over acid a pineapple will do that. Get your ph balanced and it will not. It’s like when your solid gold ring turns your finger black. Over acid!!!
The same thing happened to my college roommate/best friend. The whole time we lived together she was allergic to pineapple. But then after she got married and had her first kid the allergy went away. She was thrilled. Pregnancy does weird things!
Oh it is tasty! I used 2 cans of pineapple slices and cut then diwn, and left out the cilantro, since my family doesn’t care for it at all. It was perfect with tacos el pastor!! I will uae this as a base for summertume fruit salsa qith cinnamon chips!! Refreshing!!

Flavorfully fresh pineapple salsa was perfect for a 92 degree hot day. I used a large can of chunk pineapple instead of fresh and also left out the jalapeño since I can’t take the heat.
