Pesto Guacamole

Serve this simple Pesto Guacamole with tortilla chips, crackers bread, veggies, or use as a sandwich spread! It’s guac-a-licious!
What do you do when your basil plants take over your garden box? You make pesto. In fact, you make lots of pesto. Our freezer is stocked with pesto. I’ve also made a few batches of Easy Marinara Sauce to tackle our basil. Every time I look out our kitchen window, our basil looks the same. It looks like I haven’t even touched it. I think our basil is playing games on me. I think it grows back as soon as I cut it. I can’t keep up!
I made another batch of pesto and decided to find a new use for it, Pesto Guacamole. I love pesto, I love guacamole, so why not put them together?
When I told Josh my idea to make Pesto Guacamole, he was on board from the get go. Sometimes he thinks my recipe ideas are a little crazy, but he was excited about this one. And for the record, he almost always loves my “crazy” recipes after he tastes them. He just has a hard time thinking outside of the box. Good thing he has me:)
I picked a large bouquet of basil and made pesto. I used the same basil pesto recipe I used for our Zucchini Noodles with Pesto. It’s simple and classic. You can also use our nut-free Spinach Basil Pesto Recipe. It’s a winner. If your basil plants aren’t growing like weeds like ours, you can always use store bought basil. Or you can help yourself to our basil. We are happy to share:)
Once you’ve got your pesto ready, all you have to do is mash up some avocados and stir in the pesto. I also like to add a little fresh lemon juice to keep the avocados from browning.
We served our Pesto Guacamole with tortilla chips, the obvious, but it would also be good with crackers, bread, or cut up veggies. And next time I make it, there will be a next time, I am going to use it as a spread on a veggie sandwich. My mouth is watering just thinking about it.
I have to thank our basil for making me create this Pesto Guacamole. It’s a new favorite at our house. If you need an easy appetizer for your Labor Day party, make Pesto Guacamole. You know you want to try it! And football season is here, so make a big batch of Pesto Guacamole for game day!
Pesto Guacamole
Ingredients
- 4 medium avocados halved, seeded, and peeled
- 2 tablespoons basil pesto
- 2 teaspoons fresh lemon juice
- Salt and black pepper to taste
Instructions
- Place the scooped avocado pulp into a medium bowl. Mash with a fork. Stir in the basil pesto and lemon juice. Season with salt and pepper, to taste. Serve with chips, crackers, bread, or veggies.
- Note-we like to use our Spinach Basil Pesto or Basil Pesto recipe. You can use store bought pesto if you are in a pinch!
