With this recipe, you don’t have to boil the pasta first, it cooks right in the pot with all of the other ingredients. It is the perfect weeknight meal!
The penne pasta is coated in a rich marinara sauce with hearty sausage, veggies, and lots of cheese. It only takes 30 minutes to make and is so good with garlic bead and a simple salad on the side.
Make sure you add this One Pot Sausage Pasta to your dinner rotation. It is guaranteed to be a family favorite!

Sausage Pasta Ingredients
- Olive oil– for sautéing!
- Sausage– you can use chicken or smoked sausage links. Slice into 1/2-inch thick slices.
- Onion– a yellow or white onion.
- Red bell pepper– seeds removed and diced.
- Garlic– a must for pasta!
- Tomato paste– to give the sauce a rich tomato flavor!
- Kale– we love using kale because it is hearty and holds up nicely, but spinach will also work.
- Diced tomatoes– don’t drain, use the whole can.
- Herbs– dried basil, oregano, and fennel seed.
- Pasta– we use penne pasta, but other small noodles like rotini, farfalle, or orecchiette, will also work. If you need the recipe to be gluten-free, you can use gluten-free pasta.
- Broth– you an use vegetable or chicken broth.
- Mozzarella cheese– we like to use fresh mozzarella because it gets super melty. Just chop it up. If you don’t have fresh mozzarella, you can use shredded mozzarella.
- Parmesan cheese– more cheese please!
- Fresh basil– for garnish!
How to Make One Pot Sausage Pasta
- Heat a large skillet or pot over medium heat and add the olive oil. Add the sausage slices, onion, red pepper, and garlic. Cook, stirring often, until the onion and peppers are tender and the sausage is cooked through, about 5-7 minutes.
- Add the tomato paste and stir. Add in the chopped kale, diced tomatoes, basil, oregano, and fennel seed.
- Add in penne pasta and broth. Stir until combined. Cover with a lid and cook for 8-10 minutes, stirring occasionally, or until pasta is al dente.
- Remove lid, stir and add in the fresh mozzarella cheese. Stir and cook until cheese is melted. Top with Parmesan cheese and fresh basil. Serve warm.
- Pro tip- If you don’t have a lid for your pot or skillet, you can place a large baking sheet over the skillet/pot to cover.

How to Store
Store leftover sausage pasta in an airtight container in the refrigerator for up to 4 days. You can reheat in the microwave or oven. The leftovers are GREAT!

Equipment
- Large Skillet (I use my 10-inch cast iron skillet for this)
Ingredients
- 2 tablespoons olive oil, divided
- 1 pound sausage links, cut into 1/2-inch thick slices (chicken or smoked sausage)
- ½ medium yellow onion, diced
- 1 red bell pepper, seeds removed and diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 cups chopped kale
- 15 oz diced tomatoes
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon fennel seed
- 8 ounces uncooked penne pasta
- 2 cups vegetable or chicken broth
- 1/2 cup chopped fresh mozzarella cheese
- 1/4 cup Parmesan cheese
- 3 tablespoons chopped fresh basil, for garnish
Instructions
- Heat a large skillet or pot over medium heat and add the olive oil. Add the sausage slices, onion, red pepper, and garlic. Cook, stirring often, until the onion and peppers are tender and the sausage is cooked through, about 5-7 minutes.
- Add the tomato paste and stir. Add in the chopped kale, diced tomatoes, basil, oregano, and fennel seed.

- Note-we like to use our 10-inch cast iron skillet. If you don't have a lid for your pot or skillet, you can place a large baking sheet over the skillet/pot to cover. You can also use DeLallo's whole wheat or gluten free pasta in this recipe.

This is a great recipe as it can take so many substitutions like tonight it had green beans, no yellow pepper, no tomatoes, extra garlic and beef instead of chicken stock (plus extra stock as we ran out of tinned tomatoes) and cheddar cheese works best for us. Once its past 5:30pm you need something flexible!!
Only gripe is it takes longer than 30 mins start to finish including chopping (and i am fast) mostly as the pasta tends to take longer however, as that bit requires no supervision, that is the time usually used to find the forks, locate everyone, clear the table, pack school bags etc etc

Tasty though needed a bit more oomph of spice for us. We followed the recipe in general, used mild Italian sausage that we’d BBQ’d, canned fire roasted tomatoes, and fresh basil and oregano from the garden. The addition of kale was a nice touch. Next time will try spicy Italian sausage.ย

I donโt have tomato paste but have diced tomatoes and canned tomato sauce. Is there a way to substitute for the paste? Trying to prevent a run to the store.
The tomato paste adds a rich tomato flavor and thickens it a little, I haven’t tried it without it but if you don’t want to go to the store, you could try leaving it out!

I made this last evening–loved it and so did my Tom! It made a lot for two people but leftovers are always welcome when it’s a good recipe. I didn’t have spinach or kale (next time!) so I put in a can of cannellini beans. I’m glad I went for my cast iron Dutch oven over my 10″ pan as it was filled to the top. Thank you for posting my new favorite!
So easy to make! I didn’t have kale or capsicum but I didn’t miss either. I raced outside and cut some fresh spinach to stir through before serving. It was so yummy, filling and left overs for tomorrow’s lunch. A great twist for sausages!

How do you reheat the leftovers? Do you reheat the One Pot Sausage and Pasta in the same pot in which you originally cooked it?? If so, should you add water or more sauce when reheating this dish? Thank you.
You can reheat in the microwave. If you want to do a large portion, you can put it back in the pot. Cover while heating and stir. If it is dry, add a little water.

Wow, wow, wow! Let me start by saying I have made many โOne potโ meals in my years but this one simply works! It was my 12 year olds turn to cook dinner for the family tonight and since we had sausages I googled โOne pot sausageโ to find him a recipe he could follow. I am so glad I found your recipe. We followed it almost exactly except a few adjustments (macaroni instead of penne, thyme, oregano & mixed herbs, spinach instead of kale) and it turned out wonderfully! The ratio of 2 cups veggie stock to 250grams of macaroni was just right. Didnโt need any extra salt at all! Thankyou, this will now be a regular in our house and my son is very proud of the amazing dinner he cooked for us.

This has been a repeat recipe for me in the last 2 or so months. I use gluten free penned and baby spinach instead of kale and often add in some finally diced zucchini for extra vegetables. Loved by hubby and toddlers alike!

This one pot sausage pasta is a big hit in my house! I canโt make enough of it. However, after a few times I decided to try something different. Instead of the sliced sausages, I used ground sausage meat without the casing. It was super! It was much easier to brown the meat that way! One other thing I tried was using chicken sausage instead of pork!! That went over just as well! Enjoy!

I made this last night, and it was a hit! My husband and kids really enjoyed it. I used bratwurst because we had some left over that needed to be used, but other than that I followed the recipe. It had really great flavor and was fairly simple to make. I will definitely make this again.

Love the ingredients but would NEVER cook pasta in the same pot. Always cook the pasta in its own pot. It’s a cardinal sin as an Italian to do that.
I have made this recipe a few times and it one of my favorite. I use Italian Hot sausage to give it a little kick and it is just enough to do it. The Kale is a nice addition for flavor (or you can substitute with baby spinach.) Love, love, love it.
