S’mores are a MUST when there is a campfire, but I also love making s’mores treats in my kitchen. A few favorites include s’mores cookies, s’mores clusters, and s’mores rice krispie treats. I also love my peanut butter s’mores bars because we all know s’mores are better when peanut butter is involved.

My classic peanut butter s’mores bars are insanely delicious, but they are a labor of love. So I decided to create these EASY No-Bake Peanut Butter S’mores Bars. They are equally delicious and you don’t need an oven or campfire to make them. YAY!

The bars layered in a 9×5-inch loaf pan. Start with a peanut butter graham oat layer, then marshmallow cream, melted chocolate, and crushed graham crackers. Add another peanut butter graham oat layer and top with more chocolate, graham crackers, and flaky sea salt. All of the layers create the ultimate s’mores treat!

Store the bars in the fridge and enjoy a sweet s’mores treat anytime!

Ingredients

  • Peanut butter– use creamy peanut butter, I prefer natural for this recipe. Stir well before using. Costco’s Kirkland organic peanut butter is my favorite brand.
  • Honey– to sweeten the bars. It also helps bind the peanut butter mixture together.
  • Vanilla extract– always use pure vanilla extract.
  • Graham crackers– you will need 6 graham cracker sheets. A graham cracker sheet is the entire rectangle.
  • Oats– use old fashioned oats.
  • Flaky sea salt– I add a little salt in the peanut butter mixture and I sprinkle salt on top of the bars.
  • Chocolate chips– I use semi-sweet chocolate chips, but milk chocolate or dark chocolate chips will work too.
  • Coconut oil– adding coconut oil to the chocolate will help it harden and make the chocolate shiny and smooth.
  • Marshmallow creme– use marshmallow creme or fluff, not actual marshmallows. You can find marshmallow creme in the baking aisle.

How to Make No Bake Peanut Butter S’mores Bars

  • Line a 9×5-inch loaf pan with parchment paper. Set aside.
  • In a medium bowl, add the peanut butter, honey, and vanilla extract. Stir together with a spatula until well combined.

  • Put 4 of the graham cracker sheets in a food processor or blender, and blend until you have graham cracker crumbs.
  • You should have a heaping half cup of crumbs. If you don’t have a blender or food processor, you can put them in a sealed plastic bag and crush with a rolling pin, just make sure you crush them finely.

  • Add the graham cracker crumbs, oats, and sea salt to the peanut butter mixture. Stir until well combined.

  • Transfer half of the peanut butter oat mixture to the prepared pan. Press evenly into the bottom of the pan.

  • In a medium microwave safe bowl, combine the chocolate chips and coconut oil. Place in the microwave and heat in 30 second intervals, or until smooth. Stir well. Set aside.

  • Spread the marshmallow cream on top of the peanut butter oat layer. It is sticky but spread as best as possible with a spatula or butter knife.
  • Pour half of the chocolate overtop of the marshmallow layer. Spread with a spatula so the chocolate is in an even layer.
  • Take one graham cracker sheet and crumble it over the chocolate.

  • Gently press the remaining peanut butter oat graham mixture over the top of the bars.
  • Pour the remaining melted chocolate over the top and evenly spread with a spatula.

  • Crumble the remaining graham cracker sheet over the top and sprinkle with flaky sea salt.
  • Cover the pan with plastic wrap and place in the refrigerator. Chill the bars for at least 3 hours before cutting.

  • When chilled completely, cut into bars and enjoy! The peanut butter s’mores combo is SO good!

How to Store the Bars

  • Store the bars in an airtight container in the refrigerator for up to 2 weeks.
  • You can freeze the bars in a freezer container for up to 3 months. Thaw before enjoying.

  1. If you donโ€™t have coconut oil could I substitute it with either vegetable oil or extra virgin olive oil?

    1. No, they are not hard. The peanut butter oat graham layer is chewy, the marshmallow layer is gooey and the chocolate hardens, but it’s not too hard:)
